In developing the South Beach Diet, Dr. Agatston reduces the consumption of believes "bad carbohydrates". These carbs quickly absorbed by the body, and have a high glycemic index; in the long run, there is insulin resistance. This means that the insulin seizes to process fat or sugar in the correct way. He also takes a very critical look at saturated fat and Trans fat; these two are the biggest contributing factors to cardiovascular ailments. The South Beach Diet emphasizes on reducing the consumption of “bad fats and bad carbs” and of course increases the consumption of “good fats and good carbs”.

The Good, the Bad and the Downright Ugly – South Beach Diet Discriminates
The doctor defines what he means by "Good carbs” - these are fiber loaded, and have a low glycemic index. This means that the body takes a long time to digest and absorb these foods, what’s essential that these carbs have nutritional value. Whole wheat and brown rice are good examples of good carbs. Omega-3 fatty acid fats present in nuts and sardines fish are "Good fats". Polyunsaturated and monounsaturated fats are good and saturated and Trans fats are down right evil.

The Phases of the South Beach Diet
To make the diet more effective Dr. Arthur Agatston has worked out phases. These phases look at improving one’s way of eating forever. It introduces a range of foods, and the diet is easy and flexible to follow. The dieter is at once exposed to whole grains and variety of vegetables mono- and polyunsaturated fats, with omega-3 fatty acids foods such as fish. It reduces sugar based, over refined, Trans fat based foods. It also does not encourage starvation, in fact, this good doctor recommends that the person eat until he or she is satisfied, up to six meals a day!
  • Phase I, of the diet spreads over two weeks. The aim is to get rid of insulin resistance in the most natural way. Foods that have high or even moderate glycemic carbohydrates are completely avoided. These include foods such as candies, bakery products, potatoes, fruits, grains and even cereals. A dieter can expect to lose about 8 to 13 pounds in this phase.
  • Phase II is a return to a normal diet, though slowly, and in moderation. Whole grain foods, cereals, fruits and vegetables are once again given in moderation. Once the dieter has reached the correct weight, then the last phase begins.
  • Phase III is really a lifelong adjustment to a new way of healthy eating, where the dieter begins to introduce three servings of whole grains and fruits
