Five Favorite Recipes
Here are five vegetarian recipes I rather like - Cauliflower Manchurian, Veg Manchurian, Thai Red Curry, Paneer Amritsari, and Paneer Tikka.
I won't really call myself a full-fledged gourmet, but certainly I'm a little fledgling one. I love eating food, cooking food, serving food, and reading about food. I get hungry just reading recipes. I hope the ones given below have the same effect on you all.
Here are five vegetarian recipes I rather like -
1. Cauliflower Manchurian -
This takes about an hour to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :
1.Butter – 2 tablespoons
2.Cauliflower flowerets
3.Chilli Powder – 2 teaspoons
4.Coriander – a small bunch
5.Corn Flour – 3 tablespoons
6.Cumin Seeds – as needed
7.Flour – 3 tablespoons
8.Garlic – 3 finely crushed flakes
9.Garlic – 4 or 5 chopped flakes
10.Ginger – 1 small, crushed piece
11.Green Chillies – 3 or 4 chopped
12.Lemon Juice – 2 tablespoons
13.Oil – as needed
14.Onion – 2
15.Salt – a pinch or according to taste
16.Soya Sauce – as needed
To Prepare :
Mix together 2 tablespoons of Corn Flour and the Flour and make a batter.
Add the crushed Ginger, Garlic, Chilli Powder, Salt, Lemon Juice, Cumin Seeds, Soya Sauce, and Coriander.
Dip the Cauliflower flowerets in this batter and then deep fry until they become golden-brown.
Then remove and drain.
To make the Sauce:
Mix 1 tablespoon of Corn Flour in a little water and add Soya Sauce and Salt. Mix well and set aside.
Fry Chillies, Garlic, Onion in butter for about 5 minutes, and then add Sauce and cook on a low heat.
Remove when the Sauce thickens as desired and pour it over the fried Cauliflower floweret.
Garnish with coriander leaves before serving.
2. Veg Manchurian :
This takes about an hour to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :
1.Cabbage – 2 cups grated and squeezed of excess water
2.Carrot – 1/2 cup grated
3.Chillies – 4 or 5 chopped
4.Coriander – as needed
5.Corn Flour – 2 tablespoons
6.Garlic – 1 tablespoon chopped
7.Oil – as needed
8.Onion – 1 grated
9.Pepper Powder – 1 1/2 teaspoon
10.Salt – as needed
11.Soya Sauce – as needed
12.Sugar – 1/2 teaspoon
To Prepare :
Mix the grated Cabbage, Carrot, Corn Flour, and a little salt, and make a dough. Round this into small balls and deep fry these until they turn brown. Set aside.
Fry Garlic, Onion, and Chillies over high heat for a few minutes.
Add as needed Water, Salt, Pepper, Sugar and Soya Sauce, and boil.
Add Corn Flour dissolved in water and let thicken.
Add fried balls and cook for a little while.
Add Coriander leaves before serving.
3. Thai Red Curry :
This takes about ten minutes to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :
1.Basil – 10 chopped leaves
2.Brinjal – 2 diced
3.Cauliflower – 1 cup flowerets
4.Coconut Milk – 2 cups
5.Corn Flour – 1 tablespoon dissolved in water
6.Mushroom – 1/2 cup
7.Oil – as needed
8.Red Curry Paste – 7 tablespoons
9.Salt – as needed
10.Soya Sauce – as needed
To Prepare :
Mix the Corn Flour and Coconut Milk.
Fry the Red Curry Paste in Oil for a few minutes.
Add the Corn Flour-Coconut Milk mixture, Soya Sauce. Basil, Cauliflower, Mushroom, and Brinjal, and simmer under the vegetables are tender.
Add salt as needed and boil until the curry thickens.
Remove and serve with rice.
4. Paneer Amritsari :
This takes about thirty minutes to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :
1.Ajwain Seeds – 1 teaspoon
2.Anardhana Powder – 1 teaspoon
3.Coriander – as needed
4.Garam Masala – 1/2 teaspoon
5.Garlic – 1 teaspoon finely crushed
6.Ginger – 1 teaspoon grated
7.Gram Flour – 3/4 cup
8.Oil – as needed
9.Onions – 2 sliced
10.Paneer – 500 gms, cut into small cubes
11.Red Chilli Powder – 1 teaspoon
12.Salt – as needed
13.Sugar – 1/2 teaspoon
14.Turmeric Powder – 1/2 teaspoon
To Prepare :
Mix well Flour, Salt, Ginger, Garlic, Turmeric Powder, Ajwain Seeds, and Garam Masala. Add a little Water and Oil to the mixture.
Soak Onions in a little mixture and soak the Paneer for about ten minutes in the rest.
Remove Paneer and fry till golden-brown.
Then fry Onions till light brown.
Add the marinating mixture and stir-cook.
Then add fried Paneer, Chilli, Anardhana powder, Sugar,and Salt, and toss well.
Remove, garnish with Coriander, and serve hot.
5. Paneer Tikka:
This takes about ten minutes to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :
1.Besan - 2 tablespoons
2.Capsicum – 1 cup chopped
3.Cumin Powder - 1 tablespoon
4.Curd - 2 tablespoons
5.Garam Masala - 1/4 tablespoon
6.Ginger-Garlic - 1 tablespoon paste
7.Oil – as needed
8.Onion – 1 cup chopped
9.Paneer – 1/2 kg
10.Red chilli powder - 1/4 tablespoon
11.Salt – as needed
12.Tomato – 1 cup chopped
To Prepare :
Add a pinch of Salt to Water and boil Paneer.
Mix well Curd, Ginger-Garlic Paste, Garam Masala, Red Chilli Powder, Cumin Powder, Salt, and Besan.
Soak Paneer, Capsicum, Onion, and Tomato in this mixture.
Then bake for about 10 minutes.
Remove and serve.

To Prepare :
Mix together 2 tablespoons of Corn Flour and the Flour and make a batter.

To Prepare :
Mix the Corn Flour and Coconut Milk.
Fry the Red Curry Paste in Oil for a few minutes.
Add the Corn Flour-Coconut Milk mixture, Soya Sauce. Basil, Cauliflower, Mushroom, and Brinjal, and simmer under the vegetables are tender.
Add salt as needed and boil until the curry thickens.
Remove and serve with rice.
4. Paneer Amritsari :
This takes about thirty minutes to prepare, 10 minutes to cook, and makes 4 servings.
The required Ingredients are :

To Prepare :
Mix well Flour, Salt, Ginger, Garlic, Turmeric Powder, Ajwain Seeds, and Garam Masala. Add a little Water and Oil to the mixture.
Soak Onions in a little mixture and soak the Paneer for about ten minutes in the rest.
Remove Paneer and fry till golden-brown.
Then fry Onions till light brown.

11.Salt – as needed
12.Tomato – 1 cup chopped
To Prepare :
Add a pinch of Salt to Water and boil Paneer.
Mix well Curd, Ginger-Garlic Paste, Garam Masala, Red Chilli Powder, Cumin Powder, Salt, and Besan.
Soak Paneer, Capsicum, Onion, and Tomato in this mixture.
Then bake for about 10 minutes.
Remove and serve.
