Bread Recipes
1. Portuguese Sweet Bread

Ingredients:

1. Warm Water - 1/4 cup
2. Scalded, Cooled Milk - 1 cup
3. Margarine - 1/2 cup
4. Flour - 3 cups
5. Sugar - 3/4 cup
6. Salt - 1 teaspoon
7. Eggs - 3
8. Dry Yeast - 2 packets

Method:

First dissolve the yeast in the warm water, and then add the scalded, cooled milk, margarine, flour, sugar, salt, and eggs. Mix and beat the mixture until a smooth dough is formed. Knead the dough thoroughly on a greased surface. Divide into two parts and then set aside to rise for 2 hours. After the dough has risen double its former size, brush it lightly with an egg and sugar mixture and bake in oven at 350 degrees for 45 minutes. Serves 2.

2. Injera or Ethiopian Flat Bread

Ingredients:

1. Warm Water - 2 1/2 cups
2. Flour - 1 3/4 cups
3. Self-rising Flour - 1/2 cup
4. Dry Yeast - 1 packet
5. Baking Soda - 1/2 teaspoon
6. Salt - 1/2 teaspoon

Method:

Dissolve the yeast in the warm water and add the flours to this until a thin, smooth batter is formed. Set aside for three days to rise, stirring the mixture once every day. After the mixture has risen, add the baking soda and salt and set aside for 15 minutes. Then heat a pan and pour the batter until the pan bottom is evenly covered. Cook until the Injera is browned on one side and then remove. The other side should not be browned. One Injera serves one. Make many.

3. Greek Christmas Bread

Ingredients:

1. Warm Water - 1/4 cup
2. Milk - 1/4 cup
3. Vegetable Oil - 1/4 cup
4. Whole Wheat Flour - 1 1/2 cups
5. All Purpose Flour - 1 cup
6. Raisins - 1/4 cup
7. Chopped Walnuts - 1/4 cup
8. Sugar - 1/3 cup
9. Salt - 1/4 teaspoon
10.Dry Yeast - 1 packet
11. Egg - 1
12. Ground Cardamom - 1 teaspoon

Method:

Dissolve the yeast in the warm water, and mix in the milk, vegetable oil, flours, egg, sugar, salt, cardamom, raisins, and walnuts. Stir well until smooth dough is formed. Knead the dough on a floured surface and shape into a round loaf. Put in a greased pan, cover with a damp towel, and set aside to rise for an hour. After the dough is double in size, bake in over at 350 degrees for 45 minutes. Serves 5.

4. Buttermilk Cheese Bread

Ingredients:

1. Warm Water - 1/4 cup
2. Butter-Milk - 1/2 cup
3. Sourdough Starter - 1/2 cup
4. Flour - 3 cups
5. Cheddar Cheese - 1 cup
6. Blue Cheese - 1/2 cup
7. Chopped Green Chilies - 1 cup
8. Dry Yeast - 1 packet
9. Baking Powder - 1 teaspoon
10. Salt - 1 teaspoon
11. Sugar - 1 tablespoon
12. Ground Red Pepper - 1 teaspoon

Method:

Dissolve the Yeast in the Warm Water, and add the Butter-Milk, Sourdough Starter, Flour, Cheddar Cheese, Blue Cheese, Chopped Green Chilies, Baking Powder, Salt, Sugar, and Ground Red Pepper. Mix well until a smooth dough is formed, and set aside to rise for an hour. Then bake at 350 degrees for 45 minutes. Serves about 16.

5. Banana Bread

Ingredients:

1. Warm Water - 1/4 cup
2. Self-rising Flour - 3 cups
3. Mashed Bananas - 1 1/2 cups
4. Butter - 1 cup
5. Sugar - 1 1/4 cups
6. Raisins - 1 cup
7. Chopped Walnuts - 1/2 cup
8. Salt - 1/2 teaspoon
9. Grated Nutmeg - 1/4 teaspoon
10. Cinnamon - 1/2 teaspoon
11. Eggs - 3

Method:

Dissolve the Yeast in the Warm Water, and add Self-rising Flour, Mashed Bananas, Butter, Sugar, Raisins, Chopped Walnuts, Salt, Grated Nutmeg, Cinnamon, and Eggs. Mix well until a smooth dough is formed and set aside to rise for an hour. Then bake in oven at 350 degrees for 45 minutes. Serves 2.

6. Chinese Pan Bread

Ingredients:

1. Warm Water - 1/2 cup
2. All Purpose Flour - 1 1/2 cups
3. Vegetable Oil - 2 teaspoons
4. Salt - 1 teaspoon
5. Chopped Onion - 1/3 cup

Method:

Mix the Warm Water, Salt, and Flour to form a well-formed dough. With a rolling pin roll the dough into a light sheet. Add the Vegetable Oil to the Chopped Onion and place the filling on the dough sheet. Roll up the dough and cut into sections as wanted. Press the ends shut. Heat oil in a pan and fry until browned.

7. Spiced Italian Bread

Ingredients:

1. Warm Water - 1 3/4 cups
2. Flour - 5 cups
3. Melted Butter - 1 tablespoon
4. Sugar - 1 tablespoon
5. Salt - 2 teaspoons
6. Cinnamon - 1/8 teaspoon
7. Nutmeg - 1/8 teaspoon
8. Lemon Juice - 1/8 teaspoon
9. All Spice - 1/8 teaspoon
10. Dry Yeast - 2 packets
11. Salad Oil - as needed

Method:

Dissolve the Yeast in the Warm Water, and add the Melted Butter, Flour, Sugar, Salt, Cinnamon, Nutmeg, Lemon Juice, and All Spice. Blend well until a smooth dough is formed. Knead the dough and divide it into two parts and set aside for twenty minutes. Then, with a rolling pin, roll each dough part into a sheet. Roll each sheet into a bread stick, brush with salad oil, and refrigerate for 24 hours. Then remove, let rest for 10 minutes, and bake in oven at 350 degrees until done.
