COCOA PEANUT BUTTER TRUFFLES
Makes 8 Servings *** ½ ounce per serving *** 2 net carbs per serving
INGREDIENTS:
4 tablespoons sugar-free peanut butter
1 tablespoon unsweetened cocoa powder
¼ cup heavy whipping cream
¾ cup artificial sweetener
1 ½ cups unsweetened coconut
COOKING INSTRUCTIONS
1. Set the mixer to medium and combine the peanut butter, cocoa, heavy whipping cream and artificial sweetener together. Beat until smooth.
2. Place a large piece of wax paper onto a table and sprinkle the coconut onto the wax paper.
3. Using a ½-ounce scoop or a tablespoon, shape the mixture into 8 balls.
4. Roll the balls in the coconut until completely covered.
5. Place the truffles into the fridge for 1 hour before serving.
6. You can roll the truffles in unsweetened cocoa powder or chopped almonds as well. Chopped almonds will add to the net carb total, increasing it to 2.6.
