I find this article so inspiring.I have asked Chefs that i recruit for various Hotels to read it.
The problem i have found with Recruiting Chefs,they always think they know everything and hardly spare room to learn more.At a certain time they dont believe that they dont know or need to learn more.
Better still if they have worked in larger hotels they never accept that tere may b something they dont know,or that most of the training is on the job
I use this article as a Kitchen Anthem to the Chefs. They rehearse it daily
