I first found the Bacardi Rum Cake recipe in 1979. I made one and brought it to a family gathering and they were hooked! For years, whenever we had a gathering, it was 'make your rum cake'! People were telling me to start a business making this cake. I eventually got tired of making the cake and a lot of people stopped drinking. Well this Thanksgiving I've been invited to two dinners and both hosts said 'make a rum cake' so I'll be making 2 or 3! If made right, you're right, there's no better! |

I baked this recipe since I found it in the Miami Herald I think was in 91 I don't know now how many copies I have giving away I love it and my friends and relatives As a Cuban, we were raised with Bacardi and Coke and when I bring the cake I always bring a bottle of Coke because we used to drink rum& coke It is not more CubaLibre iit is now Mentirita (A little lie) Thanks for the recipe again, from Miami |

I made this cake for a friend's birthday (a big rum fan!). I didn't have a bundt pan & put it in a 13 x 9" pan which worked fine. It was excellent! |

Unless I'm missing something, the cake recipe is incomplete. The only ingredients listed for the cake: 1 instant pack of Jello vanilla pudding, 4 eggs, 1/2 cup of cold water, 1/2 cup of oil, 1/2 cup of rum. |

I've been making this cake since 1981 when the recipe was first publisted in Bon Appetit. So I couldn't help but notice that this one omitted the box of yellow mix in the ingredients list. This is one of the great cakes of all time, but one made of only nuts, eggs, oil and rum will surely fall flat! |

Bacardi Rum Cake is my favorite and so appropriate for parties. Just make sure that someone doesn't mop the glaze off the plate with their fingers. They may get a habgover. |
