And, once I start explaining, I'm always reminded that the Barone's are always talking about them on Raymond. Though I think the cream is the BEST part of the cannoli, the shell adds a special touch. Many people don't like to make the shells, or can't get it just right! Shells are often difficult to find at your local grocer, and even then, they aren't authentic.
