Louis Gervais

Louis Gervais is a Five Diamond Executive Chef. In 1998 he founded Louis Gervais Fine Foods, based in North Vancouver. Louis creates light, contemporary cuisine using the finest locally sourced fresh ingredients. Louis is a graduate of the Montreal Institute of Hotel & Tourism, and has 25 years of experience in the hospitality industry. Prior to launching Louis Gervais Fine Foods, he worked at many of the top restaurants and hotels in Vancouver including opening the Wedgewood Hotel as Executive Sous Chef, and opening the AAA Five Diamond Sutton Place Hotel where he was Executive Chef from 1990 to 1996. Since he launched his own business six years ago, Louis has designed custom menus for a broad range of events from intimate informal gatherings to sophisticated weddings to large corporate functions. He also creates warm and serve takeaway menus – perfect for the time crunched gourmand – and tasty, simple lunches for patrons of his East 1st kitchen location. As well as the quality of the dishes he prepares, Louis focuses on exquisite presentation and impeccable service, ensuring that each event is both original and delectable for his discerning customers. He is a Maitre Saucier – or master of sauces – and either sauces or garnishes every dish he creates, although his approach is very much back to basics and he does not believe in sacrificing flavour for presentation.
