Ingredients
- Zucchini, grated, 2 cups
- All-purpose flour, 3 cups
- Baking soda, 1 teaspoon
- Vanilla extract, 3 teaspoons

- Eggs, 3
- Baking powder, 1 teaspoon
- White sugar, 2¼ cups
- Salt, 1 teaspoon
- Vegetable oil, 8 ounces
- Walnuts, chopped, 1 cup
In a mixing bowl, combine flour, cinnamon, baking soda and baking powder by sifting through a sieve. Beat eggs in another large mixing bowl and add sugar and vanilla to it. Mix well till thoroughly combined. Add the dry ingredients that were mixed earlier into the large mixing bowl and stir well. Fold in the zucchini and nuts into this mixture and stir once. Grease two 8x4 inch baking pans and lightly flour them too. Pour the batter into the pans and bake on a 165 degrees Fahrenheit preheated oven for 40 - 60 minutes. When this is done, insert a toothpick into the bread and if it comes out clean, allow it to remain in the pan for 20 minutes. After twenty minutes, transfer into the wire rack and let it cool completely.
Carrot-Zucchini Combination Bread
Ingredients
- Zucchini, shredded, 8 ounces
- Carrot, shredded, 8 ounces
- All-purpose flour, 3½ cups
- Brown sugar, 4 ounces
- Baking powder, 3 teaspoons
- Butter, melted, 2 tablespoons
- Ground cinnamon, 1 teaspoon
- Eggs, lightly beaten, 2
- Salt, ½ teaspoon
- Baking soda, 1 teaspoon
- Buttermilk, 12 ounces
- Lemon, zest
- Orange, zest
- Walnuts, chopped, 4 ounces
In a large mixing bowl, beat eggs, melted butter and buttermilk together. Add brown sugar to this mixture and whisk the ingredients together. Stir carrots, zucchini, lemon and orange zests into this and set aside. In another bowl, sift baking powder, flour, cinnamon and baking soda together. Combine these dry ingredients to the large mixing bowl and beat till all the ingredients are fully combined. Sprinkle the chopped walnuts into the batter and stir once. Take 9 x 5 inch loaf pans and grease them. Fill the pans with the batter and place on a 175 degrees Celsius preheated oven. Bake for 60 - 75 minutes and then take it out of the oven after conducting the toothpick test. Allow the bread to cool on the pan for at least ten to fifteen minutes and then place it on the wire rack to cool fully.
Zucchini-Chocolate Combination Bread
Ingredients
- All-purpose flour, 8 ounces
- Zucchini, shredded, 12 ounces
- Baking powder, ¼ teaspoons
- Whole eggs, 2
- Cinnamon, ½ teaspoon
- Granulated sugar, 4 ounces
- Unsweetened cocoa powder, 4 ounces
- Canola oil, 4 ounces
- Vanilla extract, 1 teaspoon
- Ground allspice, ¼ teaspoon
- Baking soda, 1 teaspoon
- Light brown sugar, 4 ounces
- Semi-sweet chocolate chips, ¾ cups
- Salt, ¼ teaspoon
Combine all the dry ingredients including flour, baking powder, cinnamon, allspice, cocoa powder and salt together in a bowl and set aside. In another bowl, take oil, vanilla extract, sugar and eggs and blend them together with the help of an electric mixer for at least two minutes. When this is done, add zucchini and this should be followed by the dry ingredients that are already mixed. When all the ingredients are fully combined, add the chocolate chips into it. Prepare a 9 x 5 x 3" pan by greasing it with a non stick vegetable spray. Pour the batter into this pan and bake in a 350 degrees Fahrenheit preheated oven for 55 - 60 minutes. Zucchini-Pineapple Combination Bread
Ingredients
- Zucchini, grated, 2 cups
- Applesauce or vegetable oil, 8 ounces
- Crushed pineapple, drained, 4 ounces
- Baking powder, 1 teaspoon
- Vanilla, 1 ½ teaspoons
- Sugar, 2 cups
- Baking soda, 1 teaspoon
- Raisins, 4 ounces
- Flour, 3 cups
- Eggs, 3
- Walnuts, chopped, 8 ounces
Break the eggs in a bowl and add vanilla, oil and sugar to it. Beat till they are fully blended and then add zucchini to it. This should be followed by dry ingredients including baking powder, flour and baking soda. Fold in nuts, pineapple and raisins into the batter and stir gently. Grease and flour a loaf pan and fill it with the batter. Bake in a 350 degrees Fahrenheit preheated oven for an hour or so. Take it out of the oven and conduct the toothpick test.
