Zucchini Bread Recipes

Zucchini Bread
Ingredients
3 Cups all-purpose flour
2 Eggs, beaten
3 Cups grated fresh zucchini
2/3 Cup melted, unsalted butter
1-1/3 Cup sugar
2 Tsp baking soda
½ Tsp nutmeg
2 Tsp vanilla
2 Tsp cinnamon
Pinch of salt
1 Cup dried cranberries or raisins (optional)
1 Cup chopped pecans or walnuts (optional)
Preparation
Preheat the oven to 350°F. In a large bowl, combine together eggs, sugar and vanilla. Then add grated zucchini and melted butter. Sprinkle salt and 2 teaspoons of baking soda over the mixture and mix it well. Then add all-purpose flour. Now you can add nutmeg and cinnamon and mix it well. If you wish, you can also add nuts, raisins or dried cranberries. Mix the batter well. Transfer the batter in a buttered loaf pan. Bake for about 1 hour in the preheated oven. Cool the baked bread for about 10 minutes.
Zucchini Bread with Pineapple
Ingredients
1 Can (8 oz) crushed pineapple, drained
3 Cups all-purpose flour
3 Eggs
2 Cups sugar
1 Cup olive oil
2 Cups coarsely grated zucchini
1 Cup chopped walnuts
1 Cup raisins
2 Tsp vanilla
½ Tsp baking powder
2 Tsp baking soda
¾ Tsp nutmeg
1½ Tsp cinnamon
1 Tsp salt
Preparation
Beat the eggs in a mixer. Then add sugar, vanilla and olive oil to the mixer. Beat the mixture well, until it becomes foamy and thick. Then add crushed pineapple and zucchini in this mixture and mix well using a spoon. In another bowl, mix together flour, baking powder, baking soda, nutmeg, cinnamon and salt. Then add this mixture of dry ingredients to the wet mixture of eggs, olive oil, vanilla and sugar. Gently stir it. Now add raisins and walnuts and mix it well. Transfer the batter into a greased and flour-dusted loaf pan. Bake for about 1 hour in the preheated oven to 350°F. Smooth, moist zucchini bread is ready.
Carrot Zucchini Bread
Ingredients
3½ Cups all-purpose flour
1½ Cups buttermilk
½ Cup packed brown sugar
2 Eggs, lightly beaten
1 Cup shredded zucchini
½ Cup chopped walnuts
2 Tbsp butter, melted
1 Cup shredded carrot
1 Tsp ground cinnamon
1 Tsp baking soda
1 Tbsp baking powder
½ Tsp salt
Lemon, zested
Orange, zested
Preparation
Sift together all-purpose flour, baking soda, baking powder, cinnamon and salt. Keep it aside. In a mixing bowl, mix together eggs, melted butter and buttermilk. Then add brown sugar and mix it well. Now add carrots, zucchini, lemon and orange zests. Mix it well. Combine together dry ingredients and wet mixture and stir gently, until it is combined. Then add walnuts. Now the batter is ready. Pour the batter into greased and floured loaf pans and bake in the preheated oven to 350°F for about 60-75 minutes. Cool the loaf for 10 minutes, before you cut it.
