Football season is tailgate season. Whether you’re tailgating at your house and supporting your team or outside the stadium, your tailgating experience should be a fun one. When one often thinks about tailgating, they think about hot wings. Wings are a great way to enjoy any game regardless of your location. If you want to kick it up, here is a recipe for Habanero Wing Sauce
Habanero Wing Sauce
Ingredients:
10 chicken wings or drumsticks
3 medium-large habaneros (deseeded)
2 dehydrated Thai chili peppers (these can have seeds)
2 tsp pepper
1-2 tsp salt
3 ounces of vinegar
2-3 ounces of water
half a roma tomato or 1/4 of a large tomato
4 or 5 cubes of butter from a butter log (not a big log; rather the ones that come in 1/4s)
Instructions:
Flash fry 10 wings or drumsticks. In a saucepan, heat up the water and vinegar to rehydrate the Thai chili peppers. Let that simmer for approximately five minutes. Throw in salt and pepper in the pot. Let simmer for a few seconds. Throw in tomato. In another pan, gently heat the habaneros with a little olive oil. Add a little salt to the oil when gently heating the habaneros. If you see a little char, that's perfect. Throw in pot with the Thai chili pepper and puree. You don't want to see any tomato chunks or chili pepper chunks. You can add a little more water or vinegar if you think it looks too thick. As the concoction is simmering, add the butter to thicken a bit.
