Ingredients
  • ¼ cup wheat germ
  • 1 cup low fat vanilla yogurt
  • 1 cup crushed ice
  • 1 ripe banana
  • ¼ cup fresh orange juice
  • 1 cup sliced fresh peaches
Preparation

Cut the banana into medium-sized chunks and put them into a blender. Add the wheat germ, yogurt, orange juice and peach slices to the blender. Put the crushed ice on top and blend all the ingredients together, till they become smooth. Transfer the contents to a tall glass, garnish it with wheat germ and banana or peach slices and enjoy it chilled.

Wheat Germ Vegetarian Torte

Ingredients
  • ¾ cup wheat germ
  • 1 medium-sized onion, sliced
  • 1 medium-sized tomato, thinly sliced
  • 1 teaspoon crushed marjoram
  • 8 tablespoons butter, melted
  • 2 medium-sized zucchini, sliced
  • ½ cup grated Parmesan cheese
  • 1 cup saltine cracker crumbs
  • ⅓ cup milk
  • 2 eggs
  • ¼ teaspoon pepper
  • 1 cup grated Monterey Jack cheese
  • ¼ teaspoon crushed tarragon
  • Salt to taste
Preparation

In a medium-sized bowl, combine the wheat germ, 6 tablespoons melted butter and cracker crumbs and stir well. Transfer the contents into a greased pie pan and spread it evenly. Bake this in a preheated oven at 400 degrees for about 8 minutes till it is light brown. Beat the eggs and milk together in a separate bowl and keep it aside. Cook the onions and zucchini in butter in a medium-sized saucepan, till they become crisp. Add the seasonings and stir them till they combine properly. Transfer half of the vegetables to the pie pan and sprinkle 3 tablespoons of wheat germ, half of both the grated cheese and the remaining vegetable mixture on top of the crust. Pour the egg and milk mixture on top and again add three tablespoons of wheat germ. Cover the crust with tomato slices, remaining cheese and wheat germ and bake it in the oven at 325 degrees for about 45 minutes.

Pineapple Bundt Cake with Wheat Germ

Ingredients
  • 1 cup unbleached all-purpose flour
  • 1½ cups whole wheat flour
  • ½ cup wheat germ
  • 1 cup canned pineapple
  • ½ cup pineapple juice concentrate
  • 1 tablespoon baking soda
  • 1 cup brown sugar
  • 2 tablespoons liquid egg substitute
  • 1½ teaspoons cream of tartar
  • 1 cup applesauce
  • 10½ ounces silken tofu
  • ½ cup corn syrup
  • ½ cup water
  • ¼ teaspoon sea salt
  • 1½ cups almonds
  • 2 tablespoons lemon juice
  • 1 teaspoon almond extract
Preparation

In a medium-sized bowl, sift the all-purpose flour, baking soda, salt and cream of tartar. Add the whole wheat flour and wheat germ and mix them properly. In a separate bowl, whisk the egg substitute and water till it gives a foamy appearance. In a large bowl mix the applesauce, pineapple juice concentrate, corn syrup, almond extract, brown sugar and egg substitute and stir properly. In a food processor blend the tofu, while adding the lemon juice. Transfer the rest of the dry ingredients into the applesauce mixture and the tofu mixture. Mix the crushed pineapple slices and almonds and combine properly. Pour this cake mixture into a bundt pan, greased and sprinkled with flour and bake it in a preheated oven at 350 ºF for about 45 minutes till the cake becomes light brown.
