The Classic White Wedding Cake

Ingredients
  • Cake flour - 6 cups
  • Baking powder - 2 tablespoons
  • Butter softened - 1 ½ cups
  • Sugar - 3 cups
  • Milk - 2 cups
  • Pure vanilla extract - 1 teaspoon
  • Egg whites - 12
Directions

Preheat the oven to 325°F. Grease the pan with butter and line it with a parchment paper for baking. Mix the flour and baking powder well and keep it aside. Then, whisk the egg whites until they turn fluffy. Take care not to dry them off and set this mixture aside. Beat the butter and sugar together, until they turn fluffy and light. Use a mixer to mix the flour and baking powder mixture, the whisked egg whites and the butter and sugar mixture, at slow speed. Add milk to this mixture and beat well, until all the ingredients have blended well. Add the vanilla essence to this blended mixture, mix well and pour this batter into the greased pan. Place this in the preheated oven and bake. The cake is cooked to perfection, when an inserted toothpick comes out clean.

White Almond Wedding Cake

Ingredients
  • White cake mix - 1 pack
  • White sugar - 1 cup
  • All-purpose flour - 1 cup
  • Sour cream - 1 cup
  • Salt - ¾ teaspoon
  • Water - 1 ½ cups
  • Egg whites - 4
  • Vegetable oil - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Almond extract - 1 teaspoon
Directions

Preheat the oven to 325°F. Grease the pan with butter and line it with parchment paper for baking. Take a large bowl and put the salt, sugar, white cake mix and flour into it and mix them together. Into this mixture, pour the sour cream, water, almond and vanilla extracts, egg whites and vegetable oil. Mix these ingredients well with the help of a blender, on low speed, so that no lumps are formed. Pour this batter into the greased pan, place it in the preheated oven and bake, for around twenty five minutes. The cake is done when the top of it turns golden brown and an inserted toothpick comes out clean.

Lemon Raspberry Wedding Cake

Ingredients for the batter
  • Cake flour - 6 cups
  • Baking powder - 2 ½ teaspoon
  • Salt - 1 ¼ teaspoons
  • Unsalted butter - 3 ½ tablespoons
  • Sugar - 1 ¼ cups
  • Eggs - 3
  • Vanilla - 1 ½ teaspoons
  • Milk - 1 cup
  • Freshly grated lemon zest - 1 ½ tablespoons
Ingredients for the syrup
  • Raspberries - 5 cups
  • Sugar - 2 cups
  • Fresh lemon juice - ½ cup
  • Lemon zest strips - 1 cup
  • Eau-de-vie de framboise - 2 tablespoons
  • Water - 1 cup
Directions

Preheat the oven to 325°F. Grease the pan with butter and line it with parchment paper for baking. Take a large bowl and sift together the salt, flour and baking powder and keep aside. In another bowl, whisk the egg whites until they turn fluffy. Then, beat the butter and sugar together until they turn fluffy and light and add the vanilla extracts to this mixture. Add the salt, flour and baking powder mixture to this mixture, alternating with milk to eliminate all lumps formed. Pour this batter into the greased pan, place it in the preheated oven and bake for around 40 minutes. The cake is done when the top of it turns golden brown and an inserted toothpick comes out clean. Remove the cake from the oven and allow it to cool down. In the meanwhile, prepare the syrup by adding sugar and lemon zest to boiling water and stirring until the sugar has completely dissolved. Remove the mixture from heat and allow it to cool. Strain out the lemon zest once the syrup has cooled completely and add the framboise to the syrup and stir well. Layer the cake with the syrup and decorate with the fresh raspberries.

Wedding Cake Icing Recipe

Ingredients
  • Stick butter - ¼
  • Solid white Crisco - 1 cup
  • Vanilla or coconut essence - ½ teaspoon
  • Powdered Sugar - 2 lbs.
  • Water - ¾ cup
  • Food color
  • Salt - a little
Directions

In a mixer, add salt, vanilla or coconut essence, butter and 1 pound sugar and beat well. Then, add the Crisco and beat well. Add the other pound of sugar to this mixture and beat well. Add the desired food color to this mixture, fill it in the icing cone and decorate.
