Vodka Sauce Recipe
Ingredients
- Olive oil -1/2 cup
- Butter - 1 teaspoon
- Minced Garlic cloves - 2
- Fresh parsley - 1/4th cup
- Chopped onions - 1/4th cup
- Whole peeled tomatoes - 1 can
- Vodka - ½ cup
- Heavy cream - 1 pint
- Salt and Pepper
Take a sauce pan and put it on medium heat. Add butter, garlic and onions to it. Saute the onions, till they look clear. To this add the vodka carefully along with the tomatoes and the parsley. Slowly add the cream to this. Add salt and pepper, as per your requirement. Your sauce is ready. Traditionally this sauce is served with Italian pasta, penne or rigatoni and popularly called penne alla vodka. You can add red chili flakes to this sauce to make it spicy.
Parmesan Rigatoni with Chicken in Red Vodka Sauce
Ingredients
- Vodka sauce - Made according to the instructions given above
- Virgin olive oil - 2oz
- Oregano - 1 teaspoon
- Chicken breasts, boneless - 2
- Rigatoni pasta noodles
- Parmesan cheese - small bottle
- Skillet pan - Medium-sized
- Noodle strainer
Boil water in a boiling pan and add 1oz of virgin oil and pinch of salt. Add noodles to this and boil it for 10 to 12 minutes. In the mean time prepare the skillet and set it on medium - high heat. Add olive oil, pepper, oregano to this. Stir the ingredients well and add the chicken breasts to this. Flip the chicken after a few minutes. While the chicken is cooking strain off the water from the noodles and add the sauce to this, stir well. Once the chicken is cooked, chop it into smaller pieces and mix these with the noodles. You can garnish this dish with Parmesan cheese. This is a yummy chicken recipe that can be enjoyed along with some red wine.
Vodka Salmon Sauce
Ingredients
- Penne or rigatoni
- Skinned and deboned salmon - 3 small cans
- Unsalted butter - 2 tablespoons
- Heavy cream - 1 pint
- Feta cheese (crumbled) - 1 pound
- Ketchup - ½ cup
- Chopped sun dried tomatoes - 10
- Olive oil - 4 tablespoons
- 4 minced garlic cloves
- Vodka - 3oz
- Pepper and salt
- Grated Parmesan cheese
Add butter to the saucepan along with the cream and cook it by stirring constantly. Add the feta cheese and allow it to melt. Boil the pasta in water till it's tender. Heat some oil in a frying pan, add garlic to this and cook till the garlic appears brown. Add the salmon to the pan and cook it till it turns brown. To this add 1oz of vodka, stir for a 2 minutes and take it off from the heat. The remaining vodka can be added to the mix of cheese and butter made earlier. Add ketchup till the sauce appears a little pink. Add the salmon to the sauce and stir it well. Add the pasta to the mix, sprinkle some or rather lot of Parmesan cheese to this dish which serves 6 people.
