Grilled Green Apple and Gruyere Sandwich

Ingredients
  • 8 slices Roman Meal bread
  • 8 tsp softened butter
  • 1 Granny Smith apple, cored, quartered and thinly sliced
  • 1 ½ cups grated Gruyere cheese
  • 4 tbsp honey
  • 1 pinch salt
  • 1 pinch black pepper
Directions

Preheat a large heavy frying pan over medium heat, meanwhile spread 1 tsp of butter on one side of each bread slice. Place the bread slices with the butter side down on the skillet. Now layer apple slices, cheese and honey properly onto the bread in the frying pan. Season with salt and pepper and top with remaining bread with the butter side up. Cook for 3 - 4 minutes or until the bottom slices of bread turn golden brown. Slowly flip each sandwich and cook for another 2 - 3 minutes or until golden brown and the cheese melts. Your apple/gruyere sandwich is ready to serve.

Vegetarian Mushroom Panini with Caramelized Onions

Ingredients
  • 4 slices bread
  • 2 tbsp olive oil
  • ½ onion
  • 2 portobello mushrooms, sliced
  • Swiss cheese
  • 2 tbsp sauerkraut
  • Thousand island dressing
  • Salt and pepper to taste
Directions

In a large skillet, cook the onions in olive oil over medium heat for 8 - 10 minutes or until caramelized. Add portobello mushroom slices and cook for 3 - 4 minutes or until mushrooms are cooked well. Lightly brush each slice of bread with a bit of olive oil on one side and then layer cooked onions and mushrooms on the bread. Season with a pinch of salt and pepper and drizzle each sandwich with one tbsp of thousand island dressing. Put a little amount of sauerkraut on top, and then put a slice of Swiss cheese on it. Finally, top with another slice of bread and cook until the cheese melts and the bread turns golden brown. Serve hot with a bit of extra sauerkraut.

Greek Feta Tortilla Sandwich Wrap

Ingredients
  • 4 (10-inch) whole wheat tortillas
  • ¾ cup feta cheese, crumbled
  • 16 cherry tomatoes, sliced in half
  • 10 black olives, sliced
  • ½ red onion, thinly sliced
  • 1 small yellow squash, sliced
  • 1 cucumber, diced
  • 2 tbsp balsamic vinegar
  • 1 tbsp chopped fresh parsley
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
Directions

Take a large mixing bowl and combine all the ingredients, except the tortillas. Allow it to stand for 15 - 20 minutes and stir occasionally. Drain off the extra liquid and divide salad mixture evenly among the tortillas. Fold bottom of the tortilla partly over the filling and then roll up. Your tortilla sandwich wraps are ready to serve.
