Vegetarianism has existed for hundreds of thousands of years in many different cultures, for economic, ethical and even religious reasons. Today, with more choices in food than ever before, many people have now started to op for vegetarian food, turning into vegetarians or even vegans. So, what’s the basic difference between these two categories? A vegetarian diet would exclude any form of meat, fish and poultry, but it does include some animal-produced foods like eggs and dairy products. A vegan diet on the other hand, excludes all forms of meat and animal products, like honey, eggs and even dairy products.

In America, the Land of cattle and cowboys, people at one time thought that a meatless diet would require more planning as well as some very complicated calculations. The days of mixing all of those proteins (beans and rice) and consuming different supplements are long gone. The key to a rich and healthy vegetarian diet, like with any other type of diet, is to eat many types of food items like vegetables, fruits, plenty of greens, nuts, whole grain products, legumes and seeds. Here are some quick vegetarian recipes that are simply delicious.

Lentil Soup

This hearty lentil soup is so jam packed with veggies that it is absolutely delicious. Serve with deliciously warm cornbread and your soup will be mouthwateringly perfect.

Ingredients:
  • 1 chopped onion.
  • Olive, ¼ cup.
  • 2 diced carrots.
  • 2 chopped stalks of celery.
  • 2 minced cloves of garlic.
  • 1 tsp of dried oregano, dried.
  • 1 bay leaf.
  • 1 can of crushed tomatoes.
  • Dry lentils, 2 cups.
  • Water, 8 cups.
  • ½ a cup of rinsed and thinly sliced spinach.
  • Salt to taste.
  • Vinegar, 2 tbsp.
  • Black pepper to taste, ground.
Procedure:

In a large pot, heat some oil over a medium flame. Add the carrots, onions, and the celery and then cook and stir until the onion becomes tender. Stir in the bay leaf, garlic, basil and oregano and cook for about 2 minutes. Stir in the lentils and then add the tomatoes and water. Bring the mixture to a boil and then reduce the heat and let it simmer for around an hour.When you are ready to serve the soup, stir in the lentils and then cook it till it wilts. Stir in the vinegar and the salt and pepper.

Greek Pasta with White Beans and Tomatoes

A quick and easy tasty recipe - the flavors are all wonderfully unique as they meld and combine together.

Ingredients:
  • 2 cans of Italian-style tomatoes, diced.
  • 1 can of cannellini beans, rinsed and drained.
  • Washed and chopped fresh spinach, 10 ounces.
  • Penne pasta, 8 ounces.
  • Crumbled feta cheese, ½ a cup.
Procedure:

Start by cooking the pasta in a pot of boiling water that is salted until al dente. In the meantime, mix the beans and tomatoes in a large skillet and bring it to a boil over a medium-high flame. After this, reduce the heat and let it simmer for ten minutes. Add the spinach to this sauce and let it cook for about 2 minutes or until the spinach starts wilting, keep stirring constantly. Pour the sauce over the pasta and then sprinkle it with feta.
