Easy Vanilla Bean Cheesecake Recipe
Ingredients:
- 1 (18 ounce) package vanilla sandwich cookies
- ½ cup heavy cream
- ¾ cup sour cream
- ¼ cup melted butter
- 1½ cups white sugar
- 5 eggs
- 3 vanilla beans, split lengthwise and seeds scraped
- 1 tbsp pure vanilla extract
- Preheat your oven to 300°F (150°C) and spread out little butter in a 10 inch springform pan.
- Place the sandwich cookies in a plastic bag and crush them with a rolling pin. Add the crushed crumbs in the bowl and mix them with scraped seeds of 1 vanilla bean. Pour a little melted butter above and stir to combine. Spread out this crumb mixture into the bottom and up the sides of the springform pan. Keep this aside.
- In an electric mixer's bowl place softened cream cheese and add sugar, beat it for about 2 minutes on medium speed. Once the mixture becomes smooth. Add eggs one by one and 2 vanilla beans, vanilla extract, heavy cream and sour cream. Mix all ingredients at medium speed for about a minute. Make sure the mixture is blended and smooth.
- Pour this mixture above the crumbs in the springform pan.
- Place a baking dish on the bottom rack and fill it half with water. Place the cheesecake on the middle rack and bake it until a knife inserted comes out clean. The time required is 1 hour and 20 minutes.
- Turn off the oven and let the cheesecake cool down inside the oven for about 45 minutes. Take the cheesecake out and cover it with plastic wrap, then cool it overnight or at least for 4 hours before serving. Also try making some cheesecake recipes.

- 1½ cups walnut pieces
- 1½ cups sugar
- 2 cups sour cream
- ½ cup heavy cream
- 4 tbsp unsalted melted butter
- ¼ teaspoon pure almond extract
- 1 vanilla bean, split and seeds scraped
- 4 large eggs
- 2 pounds cream cheese, softened
- 1 tablespoon pure vanilla extract
- Preheat the oven to 350°F. Add butter to a springform pan. Take a food processor, beat the walnuts with ¼ cup sugar until finely mixed. Add the butter and mix until the mixture becomes smooth. Crush the crumbs into the bottom of the pan. Bake it for 10 minutes.
- In a separate bowl mix sour cream, with ½ cup of sugar and 1 tsp of vanilla extract.
- Turn down the temperature to 300°F. In an electric mixer, beat the cream cheese with the remaining sugar and vanilla seeds until mixed properly. Add eggs one at a time in the bowl. Add the remaining vanilla and almond extract in the bowl. Mix in all the ingredients until it gets smooth. Pour this mixture from the bowl and into the pan and bake it for 70 minutes.

- Cool the cake for 3 hours then cover it with loose plastic wrap and keep it overnight in the refrigerator before serving.
