Green Tomato Pie
Ingredients:
- 3/4 cup granulated sugar
- pastry to 9-inch 2-crust pie
- 1 teaspoon grated lemon peel
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 6 to 8 medium green tomatoes
- 2 tablespoons cornstarch
- 1/4 teaspoon ground cinnamon
- 1 tablespoon butter
The green tomatoes should be washed properly; peeled and sliced and then take a saucepan so that you can combine the tomatoes with lemon juice, lemon peel, salt, and cinnamon. Now let tomato mixture cook over low heat and keep stirring the mixture frequently. Then combine sugar and cornstarch and stir it into the tomato mixture. Now keep cooking the mixture until it is clear. Keep stirring it continuously. Then add a little butter, remove the mixture from heat, and let it stand until slightly cooled. Line a pie plate with pastry and then pour in the tomato mixture. Before serving cover with top pastry, seal edges, crimp, and cut a few small slits in crust so that the steam can escape. Now bake the whole thing at 435° for about 35 to 45 minutes, or until you can see it nicely browned. You can serve either warm or cooled.
Tomato Salad
Ingredients:
- 1/3 cup of chopped basil
- 1 large red tomato, sliced
- 1 sliced cucumber
- 1 large sliced yellow tomato
- 8 ounces of mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
It is really simple to prepare. The only thing that you need to do is layer all the vegetables and cheese and then mix oil, lemon juice, salt and pepper. Drizzle it over the salad and top it with basil. Chill, if you want to.
Tomato Green Beans
Ingredients:
- 1/2 cup chopped green onions
- 1 lb. green beans, trimmed
- 1/2 cup Italian salad dressing
- 1 pt. cherry tomatoes
This recipe is also very simple. First you need to cut the green beans in half, which are to be cooked in boiling salted water until they are tender which would take about 6-8 minutes. Drain the beans well and again put them in the to pan. Now add the remaining ingredients and toss them over low heat for approximately1 minute. Serve immediately or you can also chill it and serve over lettuce.
