Tomato Recipes: Green Tomato Relish Recipe
Green tomato relish is one of the finest ways to preserve the flavor of green tomatoes when they are not available. These relishes taste excellent and are low in calories. Here is a fantastic green tomato relish recipe that you can try.
Green Tomato Relish
Ingredients
You will need about 25 large green tomatoes, 4 bell peppers that have been seeded and halved, 3 green bell peppers that too should be halved and seeded. Also take 2 cups of cider vinegar, 1 tablespoon of salt, 13 large onions, 3 table spoon of mustard seeds, 3 table spoon of celery seeds and 5 cups of sugar which is preferably white.
Procedure
For making this green tomato recipe, first grind the green tomatoes along with green and red bell peppers and onions in a mixer. They should make a coarse mixture. Now drain the water of the mixture by lining a large colander with muslin or cheese cloth and keep the mixture to drain for about an hour. Now in a large container mix the tomato mixture with the mustard seeds, celery seeds, salt, sugar and vinegar. Do keep in mind that the container should not be of aluminum. Boil the contents and cook the mixture on simmer for about five minutes.
Now pour this tomato relish in sterilized containers and screw the lids tightly over it. Now in large container, pour water so that it is filled half. Now bring the water to boil. Then place the bottles of the tomato relish within the container. Make sure that the bottles are at least two inches away from each other. The water should be above the lids of the bottles. Bring the water to boil and cover for about half an hour.
Take out the bottles from the container, keep it over a wooden surface, and let them cool. The bottles should be kept at least five inches away from each other. When the content in the bottles cools completely, press the lids of the bottles with your palm so that the bottles become air tight. Your green tomato relish is ready.
Fried Green Tomato Relish
The green tomato relish recipe can be enjoyed with green fried tomatoes. The tangy flavor of fried green tomato adds more taste to the relish. Here is fried green tomato recipe.
Ingredients
You will need two green tomatoes, 2 red tomatoes, 2 table spoon of sherry vinegar. You can also use red wine vinegar instead of sherry vinegar. Other ingredients include 2 table spoon of olive oil, salt and pepper to taste, 1 table spoon of chopped parsley, 2 table spoon of butter and little semolina flour or yellow cornmeal.
Procedure
Here is fried green tomato recipe. First of all rinse and cut green tomatoes to make half an inch slices. Now sprinkle the slices with salt and pepper on both the sides. Now lay the slices on a tissue and keep for about 10 minutes. By the time, the green tomatoes are left on the paper towel, cut the red tomatoes in two halves and squeeze the tomatoes in a strainer to get the juice in a bowl.
Now, the green tomatoes are to be coated with semolina or yellow corn meal. Now, pour about two tablespoons of olive oil in a frying pan and put the tomato slices in it. Cook the tomatoes on both the sides until golden brown. This will take about ten minutes. The frying pan you use should be about ten inches thick and use medium flame for cooking. Now put the slices on two dinner plates.
In another pan, melt butter and then add tomato juice, tomato solids and vinegar. Stir continuously for about one to two minutes. Now add chopped parsley, and salt to taste. Now add the flavor of pepper to it. Stir continuous and remove from flame. Pour this sauce over tomato stacks on the plate along with some green tomato relish and serve hot.
