Tomato Basil Soup Recipe

This is a yummy version of a tomato soup with the added flavor of basil. The tomato basil soup recipe given below is suitable for 4 servings.

The time taken for preparation and cooking is about 40 - 45 minutes.

Ingredients

4 - 5 Big Tomatoes
4 Cups Tomato Juice
12 - 14 Fresh Basil Leaves
1 Cup Whipped Cream (For making the soup thick and creamy)
½ Cup Butter (Use real butter for better taste)
Salt (To Taste)
Pepper (To Taste)

Method

Take the Tomatoes and place them in a pot of water and boil over medium heat. You will notice that the peel begins to wrinkle. Remove the tomatoes from the water with a pair of tongs and let them cool for a while. Peel off the skins crush the tomatoes lightly.

You can remove the seeds from the pulp if you like, but it is not necessary.

Puree the crushed tomatoes along with the basil leaves.

Add the tomato juice to pureed mixture and then add the whipped cream, butter, salt and pepper.

Please ensure that the mixture does not boil - that is why it is necessary that you keep stirring continuously. Keep stirring the mixture continuously over medium heat for about 25 to 30 minutes till it becomes thick.

Your creamy Tomato Basil Soup is ready to serve.

Garnishing:
  • Decorate the bowl with some fresh basil leaves while serving.
  • Sprinkle the juice of a fresh lemon (as per your taste) for a surprising tangy flavor.
Variations:
  • Non-vegetarians can substitute tomato juice with chicken stock and add pieces of boiled meat to the mixture while adding the cream and butter.
  • You can also chop 2 Medium Size Onions and add them to the tomatoes while boiling and then puree them along with the peeled tomatoes and the basil.
