Spicy Tofu
Ingredients:
- Pressed tofu - ½ package of 300 grams.
- Vegetables like carrots, celery, onions or mushroom - 3 cups.
- Peanuts or cashew nuts, roasted and unsalted - ¼ cup.
- Vegetable oil - 2 tablespoons.
- Soy sauce - 1 tablespoon.
- Sesame oil - 1 tablespoon.
- Hot and spicy chili sauce - 1 tablespoon.
- Cornstarch - 1 tablespoon.
- Water, to dissolve cornstarch - 2 tablespoons.
- Make cubes of the tofu and assorted vegetables of your choice.
- Take a wok or skillet and heat some oil in it.
- Stir-fry the vegetables for a couple of minutes till they are semi-cooked. Add the tofu and do the same.
- Mix the sauce ingredient in a bowl and blend well.
- Stir into the wok and let it thicken.
- Toss the peanuts as a garnish and serve hot.
For all those food lovers, here is an Italian style tofu recipe.
Ingredients:
- Firm tofu - 1 ½ pounds.
- Red wine vinegar - 3 tablespoons.
- Basil - ¼ teaspoon.
- Eggs - 3.
- Mozzarella cheese, grated - 1/3 cup.
- Cornstarch - 1 ½ tablespoons.
- Olive oil - 1 tablespoon.
- Drain and cut the tofu in 6 pieces.
- Take a small bowl and mix red wine vinegar with basil and stir in the tofu pieces making sure they are well coated. Let this marinate for 10 minutes.
- Whisk eggs into a bowl, add basil and oregano, and then mix in the mozzarella cheese.
- In a pan heat olive oil and cook each piece of marinated tofu in the cornstarch mixture. Then take these pieces and coat with egg and cheese mixture and fry till brown.
- Serve with sweet and sour sauce or any dip you prefer.
Ingredients:
- Firm tofu - 12-ounce packet.
- Mayonnaise - 1/3 cup.
- Miracle whip - 1 tablespoon.
- Mustard - 1 tablespoon.
- Salt - ¼ teaspoon.
- Pepper - 1/8 teaspoon.
- Thyme leaves, dried - ½ teaspoon.
- Celery, chopped - ½ cup.
- Green onions - ¼ cup.
- Parmesan cheese, grated - 1/3 cup.
- Drain the tofu and dry well with the help of absorbent paper towels.
- Take a mixing bowl and add all the ingredients and mix well.
- Add the tofu and mix till the tofu crumbles and looks like an egg salad.
- Store in the fridge and you can use this mixture to make 5 sandwiches.
This for all those health conscious, a blueberry tofu smoothie recipe.
Ingredients:
- Silken tofu - 6 ounces.
- Banana, medium-sized - 1.
- Soymilk - 2/3 cup.
- Blueberries, frozen - 1 cup.
- Honey - 1 tablespoon.
- Ice cubes - 3 cubes.
- Take the silken tofu and drain it well so as to remove all the excess water, this is because this kind of tofu is very high in water content.
- Clean and slice the banana and place in on a dish and freeze for half an hour as this will help thicken your smoothie.
- Take a blender and add banana, tofu and soymilk. Blend well for a minute. Now add the ½ cup of frozen blueberries and blend again, till it is smooth. Put in the remaining blueberries, honey and ice cubes and blend once more for about 1 minute more.
- If you want to add to the protein content, you can add 2 teaspoons of wheat germ.
- Also if you do not get silken tofu, you can substitute with low-fat yogurt.
