Traditional Herb Turkey Stuffing

Ingredients
  • 1 teaspoon salt and black pepper
  • 2 medium onions diced
  • 1½ teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon poultry seasoning
  • 10 Hard bread slices shredded into small chunks
  • 2 tablespoons unsalted butter
  • 12 oz. Button mushrooms
  • 3 stalks of celery chopped
  • 1 cup chopped freshly parsley
  • 5 cups chicken broth
  • 6 cloves of garlic
  • 2 large eggs beaten
  • 1 cup chopped walnuts
  • One pound turkey tenderloin
Method
Take a large skillet to which add butter. Heat until it melts. Add onions and celery and cook until the onions turn slight brown in color. Now, to this mixture, add mushrooms and garlic and cook till the mushrooms become tender. After they are cooked properly, turn off the flame and take out the mixture in a large bowl. To this, add salt, pepper, all the herbs and spices mentioned in the ingredients and mix all of them evenly. Then add nuts, bread pieces and beaten eggs and again mix all of them together. While mixing the above ingredients, simultaneously keep adding the chicken broth and create a mixture of the consistency you want it to be of. For the turkey stuffing, fill the mixture in the turkey cavity and keep it inside a greased casserole dish and bake at 350 degree F for around 45 minutes, by covering with a buttered foil.

Rosemary Creole Baked Sweet Potato

Ingredients
  • 6 cups of sweet potatoes, peeled and cubed
  • 1½ tablespoon creole seasoning
  • 1 tablespoon brown sugar
  • 1 teaspoon dried rosemary
  • 3 tablespoons olive oil
Method
In a large bowl, take the cubed potatoes and pour oil over them and toss them. Then add creole seasoning, sugar and rosemary and again toss the mixture. Meanwhile, take a baking dish and add the mixture to it. Bake the potatoes for around 50 minutes at 400 degree F until they become reddish-brown. Enjoy this appetizer!

Cranberry Salsa

Ingredients
  • Fresh cranberries; washed
  • Dried cranberries
  • 2 large onions; minced
  • 4 tablespoons minced cilantro
  • 4 oranges; peeled and chopped
  • 1 tablespoon minced and grated fresh ginger
  • 1 tablespoon honey
  • 1 jalapenos; minced
  • 1 teaspoon salt and black pepper
Method
Take the freshly washed cranberries and chop them in a food processor until they are fine. In a large mixing bowl, add rest of the ingredients and mix them all together. After mixing properly, keep the mixture in the refrigerator for few hours and have it cold.

Turkey Breast with Blueberry Pan Sauce

Ingredients
  • ¼ cup flour
  • 1 pound turkey tenderloin
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon pepper and salt
  • ¼ cup chopped shallots
  • 1 tablespoon chopped fresh thyme
  • 2 cups blueberries
  • 3 tablespoons vinegar
Method
In a shallow dish, whisk flour and sprinkle one teaspoon salt and pepper. Coat the turkey in the mixture. Meanwhile, take oil in a pan and cook the turkey from all the sides until it is no longer pink from within. After this, roast it in oven for 20 minutes at 450 degree F. Take out the turkey and foil it to keep warm. For making the blueberry pan sauce, cook rest of the ingredients together until the blueberry juice, extracts out. Now serve the turkey with blueberry sauce as a whole or cut it into pieces and serve. Your main course is ready!
