Kaeng Kari Kai (Chicken Curry)
Serves for 5

Ingredients

Make Nam Prik (chili paste) from
  • Ground dried chili - 3 gm
  • Ground dried hot chili - 1 gm
  • Peeled shallot - 30 gm
  • Peeled ginger - 6 gm
  • Peeled garlic - 15 gm
  • Ground roasted cumin - 1.5 gm
  • Curry powder - 4 gm
  • Lemon grass - 5 gm
  • Ground roasted coriander seeds - 3.5 gm
For soup, take
  • Chicken breast (approx 2x2 inch cut) - 500 gm
  • Potato - 250 gm
  • Palm sugar - 15 gm
  • Fish sauce - 27 gm
  • Coconut milk - 350 gm
  • Vegetable oil - 10 gm
  • Water - 300 gm
Procedure

Beat chili paste mixture thoroughly. Take some oil in a pan and fry chili paste with oil until fragrant. Add coconut milk (100 g) little at a time. Add chicken, fry for 2 minutes. Add seasonings, fry for 5 minutes. Add remaining coconut milk (250 g) and water. Let it boil, then add potato and simmer for 15 minutes.

Phad Kuichai Kung (Stir Fried Chinese Leek with Prawns)

Ingredients
  • Peeled prawns - 25 gm
  • Carrot - 35 gm
  • Chinese leek - 110 gm
  • Light soy sauce - 4 gm
  • Fish sauce - 4 gm
  • Garlic - 4 gm
  • Vegetable oil - 4 gm
  • Soup stock - 40 gm
  • Salt - 1 gm
Procedure

Wash prawns and vegetables before cutting. Boil carrot for a few minutes and then cut it. Take some oil in a pan and heat it. Add garlic, fry until fragrant, add prawns, fry for a few minutes. Then add carrot, Chinese leek and soup stock and fry for 5 minutes. Add fish sauce, light soy sauce, salt and again fry thoroughly. Remove from the stove and set on plate to serve.
