Taco is one of the popular, traditional Mexican recipes, which consists of wheat or maize tortilla folded around a filling of variety of vegetables, cheese, any meat or fish. Taco soup is prepared from similar ingredients such as tomatoes, beans, corn, ground beef and taco seasoning. It is generally topped with sour cream, cheese, nacho chips and avocado. Taco Soup
Ingredients
1 lb ground beef
2 cans Mexican style tomatoes
2 cans whole kernel corn (drained)
2 cans Ranch style beans
1 package taco seasoning
1 package Ranch mix
Preparation
First cook the ground beef and drain. Then add all the remaining ingredients to it and mix well. Allow this mixture to simmer for about 20 minutes, until it becomes thick. You can top this soup with tortilla chips, cheese or sour cream.
Taco Beef Soup
Ingredients
½ lb. hamburger
1 (16 oz) can kidney beans
1 (8 oz) can tomato sauce
1 (16 oz) can tomatoes
1½ cup water
¼ cup onion
2 tbsp taco seasoning
Sour cream
Shredded cheese
Corn chips
Preparation
In a saucepan, brown the onion and hamburger. Then add tomatoes, kidney beans, tomato sauce and taco seasoning. Add water and simmer the mixture, until it thickens. Arrange the corn chips around the bowl and pour the soup over the chips. Top it with shredded cheese.
Vegetarian Taco Soup
Ingredients
1 (15 oz) can pinto beans
1 (15 oz) can black beans
1 (15 oz) can corn
1 (15 oz) can navy beans
1 (15 oz) can green beans
1 (15 oz) can black-eyed peas or purple hull peas
1 (1 oz) package ranch dressing mix
1 small onion, chopped
1 (1¼ oz) package taco seasoning mix
2 cups water
1 (10 oz) can Rotel tomatoes
1 (14 oz) can tomato sauce
Suggested condiments
Grated cheese
Sour cream
Sliced jalapenos
Picante sauce or Tabasco sauce
Green onion
Crushed tortilla chips or Fritos corn chips
Preparation
In a big colander, drain and rinse black beans, pinto beans, navy beans, green beans, peas and corn. Put these ingredients in a crock-pot. Then add the remaining ingredients to it and mix it well. Simmer this mixture for about 30 minutes to an hour. You can add condiments of your choice. Top the soup with grated cheese and crushed tortilla chips.
