Sweet Potato Recipes
Ribs, chicken, sausages and marshmallows, all can be added to sweet potatoes. Here are some sweet potato recipes…
Sweet Potato Bake
This is an easy recipe that can be done using canned sweet potatoes.
Ingredients:
- 1, 20 ounces can of whole sweet potatoes that have been halved in length.
- 1 ¼ cups of brown sugar.
- 1 ½ teaspoons of cornstarch and 1 tablespoon extra of cornstarch.
- Salt to taste.
- ¼ teaspoon of cinnamon powder.
- 1 teaspoon shredded orange rind.
- A 12 ounce can of apricots that have been halved.
- 2 tablespoons of butter.
- ½ cup of pecans that have been halved.
- Take the sweet potatoes that have been halved and place in them in a baking dish of 11x7 inches, which has been buttered.
- In a pan, put brown sugar, cornstarch, salt, cinnamon and the orange rind. Take the apricots and drain them leaving the syrup. Add this apricot syrup to the mixture in the pan.
- Cook continuously and stir while the pan is on medium heat. Let the mixture come to a boil after 2 minutes.
- Now add the apricots, butter and halved pecans. Pour this mixture on the sweet potatoes in the baking dish.
- Bake leaving uncovered and 375 degrees for 25 to 30 minutes.
- This recipe is sufficient for 6 people.
This is tasty recipe that uses peanuts and marshmallows.
Ingredients:
- Cooked and diced sweet potatoes, 3 cups full.
- Butter, 2 tablespoons.
- Warm milk, ½ a cup.
- Salt, ½ a teaspoon.
- Marshmallows of the miniature variety.
- Peanuts, ½ cup full and chopped.
- Take a pan and melt the butter in it, to this add warm milk and salt.
- Blend the potatoes and beat the mixture till it is light and fluffy.
- Keep adding more milk as per needed.
- Pile these potatoes into a casserole dish that has been buttered.
- Preheat the oven to 375 degrees and bake the casserole for 20 minutes.
- Remove the bake and garnish with marshmallows and the chopped peanuts. Then put the dish back into the oven and let the marshmallows become a nice golden brown.
- This casserole is sufficient for 8 people.
This is a simple to do recipe that uses sausages and pineapple.
Ingredients:
- A can of 20 ounces of chunks of pineapple in juice.
- A can of 18 ounces of sweet potatoes which have been cut into an inch thick slices.
- Links or slices of smoked sausages, about 16 ounces.
- Brown sugar, 3 tablespoons.
- Cornstarch, 2 tablespoons.
- Salt to taste.
- Butter, 1 tablespoon.
- Take pineapple can juice and water to make about a cup and half of mixture.
- Now take the pineapple chunks, sliced sweet potatoes and sausages and arrange it in a well greased shallow baking dish.
- Now take a small pan and place it over low heat. Then add brown sugar, cornstarch and salt to the pan. Slowly while stirring add the pineapple juice and water mixture.
- Cook this mixture constantly till it thickens and boils. This should take a couple of minutes.
- Remove the pan from the heat and add the butter and stir to mix properly.
- Pour this mixture over the sausages and sweet potatoes in the casserole.
- Cover the casserole dish and bake at 350 degrees for 40 minutes.
Ingredients:
- Chicken pieces - 4 pounds.
- Vegetable oil - ¼ cup.
- Dry vermouth - ¼ cup.
- Salt - 1 ½ teaspoon.
- Pepper - ¼ teaspoon.
- Cinnamon, ground - ¼ teaspoon.
- Brown sugar - 1 tablespoon.
- Tart apples, cored and cut in wedges - 2.
- Sweet potatoes, cooked and sliced - 3.
- Take a skillet and add vegetable oil and let it heat. To this add chicken pieces and let them brown. Once the chicken is cooked, drain off oil leaving just one tablespoon.
- Take a mixing bowl and add dry vermouth, salt, pepper, cinnamon and brown sugar and mix well.
- Add this mixture to the chicken in the skillet and also add apple wedges.
- Cover the chicken once it has been basted and let it cook on low heat for 25 minutes.
- Add the sweet potatoes to the chicken and baste again using a cooking liquid.
- Cover and let it cook and simmer till it is ready to be served.
This is a traditional southern style recipe.
Ingredients:
- Boneless country style pork ribs - 2 pounds.
- Large sweet potatoes, peeled and cut in pieces - 3.
- Apple cider - 2 cups.
- Cider vinegar - ¼ cups.
- Worcestershire sauce - ¼ cup.
- Brown sugar - ¼ packed cup.
- Bold and spicy mustard - 2 tablespoons.
- Apples, cored and cut in chunks - 2.
- Cornstarch - 1 tablespoon.
- Take a 6-quart kettle and heat a tablespoon oil in it on high heat. Cook the ribs in it for 10 minutes till they are well-browned from all sides. Drain all the fat.
- Add the sweet potatoes to the ribs. Then add the apple juice, cider vinegar, Worcestershire sauce, sugar and mustard to in a mixing bowl and blend well.
- Add this mixture over the ribs and mix it up well. Bring it to a boil and then reduce the heat to low.
- Cover the dish and let it simmer for 45 minutes or till the ribs are tender. Then add the apples and let them cook completely.
- Transfer the ribs , potatoes and apples to a platter and keep them warm by covering in an aluminum foil.
- Now for the liquid that’s there in the dish. Add 2 tablespoons of cornstarch to water and add to the liquid. Bring it to a boil while stirring continuously and let it thicken.
- Then add this liquid to the platter of ribs, sweet potatoes and apples.
