Sushi Rice

How to Cook Sushi Rice
Firstly, you need to find the perfect rice meant for sushi. You need to look for rice with smaller grains which should get sticky while cooking. There are several brands of sushi rice available in the market; but, you should go for the one with small grain size. Take a look at the recipe below.
Ingredients:
- 3 cups of Japanese rice
- 1/3 cups of rice vinegar
- 3 and 1/4 cups of water
- 2 tablespoons of sugar
- 1 teaspoon of salt
- Put the rice in a bowl and run cool water over it, to wash it.
- Wash the rice in the water and drain the water.
- Repeat this procedure for 2-3 times until the water appears clear.
- Drain rice and keep for 20-30 minutes.
- If you are cooking in a rice cooker, then put the rice and measured water in it and cook for 20 minutes.
- Do not open the lid immediately after the prescribed time. Let is catch steam for 10-15 minutes.
- Mix rice vinegar, salt and sugar in a sauce pan.
- Heat the mixture till the sugar gets dissolved completely. Set the mixture to cool completely.
- Now open the cooker and put the rice in a large bowl. Spread the vinegar mixture over the rice and fold it.
The sushi vinegar is the most important aspect of this dish. Once you master the recipe on making this seasoning, you can whip up different types of sushi in lesser time.
Ingredients:
- 1/2 cup of rice vinegar
- 1 tablespoon of rice wine
- 2 tablespoons of sweet rice wine
- A single small square of kelp (kombu)
- 1 teaspoon of salt
- Slightly wash the kelp in cold water before using.
- Put the rice vinegar in a pan and place the kelp in it.
- Heat the vinegar with kelp in it for about a minute.
- Let the vinegar simmers so as to allow the extract of the kelp mix with the vinegar.
- Now take the kelp out of the vinegar. Add rice wine, sweet rice wine and salt to the vinegar. Heat this for 5-7 minutes.
- Your sushi rice seasoning/vinegar is ready. You need to cool this mixture at room or refrigerator temperature.
- You can use this seasoning or vinegar in place of the vinegar mentioned in the above mentioned recipe!
