Whether it's a cheese cake, chocolate cake or butter cake, it is loved by people of all ages, and especially by the kids. But with the ever increasing risks of sugar intake, like diabetes and obesity, people have reduced the consumption of sugar and started using sugar free supplements in their diet. Sugar free supplements come in three types: table sugar made from fruit concentrates or puree, powdered sugar made from aspartame and sucrose, which is the latest version in sugar free supplements with minimum calories.

Applesauce Raisin Spice Cake
Ingredients
  • 2 cups flour
  • ½ cup raisins
  • 1 cup unsweetened applesauce
  • 2 tbsp liquid sweetener
  • 1 tsp baking soda
  • 2 eggs
  • ½ cup cooking oil
  • ½ tsp nutmeg
  • 1 tsp vanilla
  • 1 ½ tsp cinnamon
  • Fruit cocktail, drained
  • ½ cup water
Method
Cook the raisins in water and allow it to cool. Add applesauce, eggs,liquid sweetener and oil; mix well. Sift together flour, baking soda, nutmeg, and cinnamon and stir the mixture. Finally add vanilla and bake in a 4 x 4 x 8 inch loaf pan at 350°F for 45 minutes or until golden brown.

Date Coffee Cake
Ingredients
  • 3 cups flour
  • ½ cup mashed bananas
  • 3 eggs
  • 1½ cups chopped dates
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ cup butter, softened
  • 1½ cups water
  • 1 tsp vanilla
Toppings
  • ⅓ cup walnuts
  • ⅓ cup chopped dates
  • ⅓ cup coconut
Method
Beat butter and mashed bananas together, until the mixture becomes creamy. Add eggs, vanilla, and water. Add the flour, soda and baking powder; beat well. Stir in the dates and spread the batter evenly in a greased 9 x 13 inch pan. Combine the toppings and sprinkle over the batter. Bake at 350°F for 20-25 minutes or insert a knife which should come out clean. Allow it to cool and serve.

Vegan Carrot Cake
Ingredients
  • ½ cup carrot, grated
  • 2 cups whole wheat flour
  • ⅓ cup frozen orange juice concentrate, thawed
  • 1¼ cups water
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ cup chopped walnuts
  • 1 cup raisins
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1¼ cups dates, chopped
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
Method
In a bowl, mix the flour, baking soda, baking powder, and salt and set aside. Take a saucepan and combine the water, raisins, dates, ginger, cloves, nutmeg and cinnamon. Bring to a boil and gently simmer for 5-7 minutes on a low flame. Transfer the shredded carrots in a bowl and pour the hot water mixture over them, and let it cool completely. Now add the orange juice concentrate and walnuts to the mixture. Combine the dry ingredients with the wet ingredients and stir well. Pour the batter into a lightly oiled cake pan and bake at 375°F for 40-45 minutes or until a toothpick inserted in the cake comes out clean. Frost with a sugar free vegan frosting and serve.
