Ingredients
  • 1 cup shortening or butter
  • 1 cup sugar
  • 1 cup milk
  • 1½ tablespoon lemon juice
  • 1 teaspoon salt
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
Method of Preparation
Preheat the oven to 425 ºF. Add sugar and solid shortening or butter into a mixing bowl. Beat the ingredients together with an electric mixer, till it reaches a smooth and creamy texture. Pour milk into a measuring cup and add lemon juice. The milk is now called "soured milk" and a common substitute for buttermilk.

Add the soured milk and flour to the sugar and shortening mixture and mix well. Add one teaspoon of salt, baking powder, baking soda and vanilla to the sugar cookie dough mixture. Mix the dough well, till all of the ingredients are mixed thoroughly. Roll the dough into balls with your hands and place them on a cookie sheet. Sprinkle additional sugar on top of each cookie if you want. Bake cookies for eight minutes or till the edges just begin to turn golden brown. Use a spatula to remove the cookies from the cookie sheet and cool on a cookie rack. Your cookies are ready to be eaten after cooling.

Ingredients
  • 2/3 cup shortening
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon soy flour
  • 1 tablespoon water
  • 4 teaspoon whole milk
  • 2 cups all-purpose flour
  • 1½ teaspoon baking powder
  • ¼ teaspoon salt
Method of Preparation
Add shortening, sugar and vanilla extract in a mixing bowl. Blend the ingredients well, using a hand blender. Add soy flour and water to the shortening mixture and beat till throughly blended. With a spoon, stir in the whole milk. Set aside.

In another bowl, swift together all-purpose flour, baking powder and salt. Add the sifted flour mixture to the creamed shortening mixture and thoroughly blend till mixed. Divide the dough in half, cover and chill for 1 hour.

On a lightly floured surface, place half of the chilled dough and roll into 1/8 inch thickness. Cut into desired shapes with cookie cutters. Repeat the same process with the other half of the chilled cookie dough.
