Bell Peppers Stuffed with Rice
The following is the best vegetarian recipe for making stuffed bell peppers with rice and tofu.
Ingredients
- 4 bell peppers
- 1 cup of uncooked brown rice
- 12 ounce diced firm tofu
- 1 and 3/4 cups of marinara sauce
- 2 cups of shredded mozzarella cheese
- 8 slices of tomato
- 1 minced clove of garlic
- 2 cups of water
- 2 tablespoons of olive oil
- Salt and pepper to taste
- In the first step, you should bring the rice to boil in a pot and let it simmer for 40-45 minutes.
- The oven should be preheated to 350 degrees F.
- Now in a pan, heat olive oil and stir and cook the tofu and garlic in it, for 5 minutes. Add marinara sauce, salt and pepper and stir until the tofu is brown.
- Take the bell peppers, remove the top, seed and clean them from the interior.
- Put a layer of cooked rice, tofu mixture, slice of tomato, marinara sauce and cheese. Repeat the layers if possible. Top with cheese.
- Place the peppers in a baking dish and bake for 25 minutes. If the cheese is melted, your stuffed bell pepper recipe is done!

- 2 green/ red bell peppers
- 8 oz of ground turkey breast
- 1 cup white rice
- 1/2 cup of diced tomatoes
- 1 cup of tomato sauce
- 1/2 cup of Monterey Jack cheese
- 1/2 tablespoon of pure olive oil
- 2 teaspoon of minced garlic
- 75 g of onion
- 1/2 tablespoon of dill seed
- 1 teaspoon of ground cumin
- 1/4 teaspoon cayenne pepper
- You should boil the rice and let it to simmer for 40-45 minutes (or follow the instructions on package).
- Now in a pan, heat olive oil, and stir garlic, onion, spices and ground turkey. Cook the turkey until brown.
- Next, add rice, tomatoes and half the tomato sauce to the turkey mixture.
- Cut the top of peppers, remove the seed and clean the interiors.
- Put the turkey and rice mixture inside the bell peppers. Top with tomato sauce and cheese.
- The remaining sauce should be put in a baking dish. Bake the peppers for 50 minutes at 375 degrees F.

- 2 cans condensed tomato soup
- 1 cup red/ green diced bell peppers
- 1 cup white rice
- 2 cloves minced garlic
- 1/2 cup diced onion
- 1 teaspoon of basil
- Grated cheese for topping

- In a pot, add 2 cans of soup and 2 cans of water. Also add the diced peppers, onions, basil and garlic into it.
- Add rice to the pot. Now heat this on medium to high heat.
- Bring the soup and rice to a boil and simmer for 7-8 minutes.
- When the vegetables are fully cooked, the recipe is ready! Top with grated cheese and serve!
