Strawberry Cake Recipes
Strawberries are favorites with almost everybody. Most everyone enjoys strawberries in one form or the other. Apart from eating strawberries as is, people like to have strawberry jam with bread, strawberry juice on ice, strawberry jelly, and so on. Here are two exciting recipes for you for making strawberry cake. The first is a recipe for a traditional strawberry cake, while the second recipe is for making strawberry short cake.

Strawberry Cake Recipe

Ingredients:

For the Cake:
Eggs – 4
Water – ¼ Cup
White Cake Mix – 1 Package
Strawberry flavored gelatin powder – 3 Ounces
Vegetable Oil – 1 Cup
Mashed Strawberries – ¾ Cup

For the Icing:
Mashed Strawberries – ¼ Cup
Butter – ½ Cup
Confectioner’s Sugar – 1 Pound

Method of Making Strawberry Cake:
  • Take a large bowl and mix the cake mix and the gelatin powder. Slowly fold in the vegetable oil. Lightly beat the eggs and fold them into the mixture. Add the water and the strawberries.
  • Take your cake pans and grease them with flour. Pour the mixture into these pans.
  • Bake in an oven at 350 Degrees Fahrenheit for about 30 minutes.
  • To test and see if the cake has baked properly, take a butter knife and insert it into the cake till the bottom and pull it out. If it comes out clean, the cake has baked properly.
  • Ideally, this mixture should make two slices of cake. Cool both the slices of strawberry cake before serving.
  • To make the icing, beat the butter and the confectioner’s sugar till the mixture is smooth. Add the strawberries and mix thoroughly.
Garnishing:

Place one slice of the cake on a plate. Spread a layer of the icing and then place the other slice on top of the first slice. Spread the remaining icing over the top and the sides of the cake. You can add slices of fresh strawberry and freeze the cake for some time before serving.

Strawberry Short Cake Recipe

Ingredients:

All-Purpose Flour – 2 ¼ Cups
White Sugar – ½ Cup
Fresh Strawberries – 3 Pints
Egg – 1
Milk – 2/3 Cup
Whipped Cream – 2 Cups
Baking Powder – 2 Teaspoons
Salt – ¼ Teaspoon
Shortening – 1/3 Cup
White Sugar – 2 Tablespoons

Method of Making Strawberry Short Cake:
  • First, slice the strawberries and toss them along with the ½ Cup of White Sugar. Put this aside.
  • Preheat the oven to 425 Degrees Fahrenheit.
  • Grease and flour a round cake pan.
  • In a bowl, combine the flour, baking powder, the salt and the 2 table spoons of white sugar. Use a pastry blender to cut the shortening till it becomes crumbs. Add this to the mixture.
  • Beat the egg lightly and fold it into the mixture and then add the milk.
  • Pour this mixture into the greased and floured cake pan and bake at 425 Degrees Fahrenheit for 15 to 20 minutes till the cake is golden brown.
  • Let the cake cool down. Then slice the cake into two halves and make two layers.
Garnishing:

Place strawberries on one slice, and then top it with the other slice. Put strawberries on the top as well, and cover with cream. You can also pour strawberry juice on top of the shortcake before serving.
