Lobster is a low fat, high protein food that contains the important omega 3 fatty acids. It is well known for reducing the risks of heart disease and strokes, and also improves eye and neurological functioning. Steaming is a great way to cook a lobster and can be done at home quite easily. The best setup for steaming a lobster is to have a sturdy and airtight steamer inserted inside a lobster pot with a fitted, heavy lid. This setup works best on a stove top, but if you're feeding more than ten people, you can keep the water in the bottom of the pan at a serious rolling boil or cook the lobsters in a large stockpot on a propane crab boil burner. It's advisable to cook the lobsters in small batches and steam them correctly, and make sure you don't overcook them. Steaming takes a little longer time and needs less water than boiling lobsters. Some of the simple and yummy steamed lobster recipes are as follows:

Steamed Lobster Recipe
Ingredients
  • 4 live lobsters (1½ pounds each)
  • Lemon caper mayonnaise
  • 2 lemons, halved
  • 1 tbsp sea salt
Preparation
Fill a large steamer with about 2 inches of water and add salt and squeeze in the lemon juice for flavor. Bring to a boil over medium heat and place the lobsters in the steamer. Cover it with a lid and allow it to steam until the lobsters turn bright red. Remove the lobsters from the pot and allow them to cool at room temperature. Chill them thoroughly before cracking open and serve with lemon wedges and lemon caper mayonnaise.

Lemon caper mayonnaise
  • 3 cups mayonnaise
  • 2 lemons, juiced
  • 4 garlic cloves, coarsely chopped
  • 2 handfuls chopped flat-leaf parsley
  • 3 tbsp capers, drained and coarsely chopped
  • Sea salt and freshly ground black pepper
Combine all ingredients in a large bowl and blend well with a wooden spoon. Set aside for some time and serve as a dip with steamed lobster.

Steamed Lobster Salad
Ingredients
  • 2 spiny lobsters(1½ pounds each)
  • 1 red onion, sliced
  • 1 lb overripe tomatoes
  • 2 ribs celery, sliced
  • 2 cloves garlic, sliced thin
  • ½ cup extra virgin olive oil
  • 20 mint leaves
  • 15 basil leaves
  • 2 cups arugula, washed and spun dry
  • Juice and zest of 1 lemon
Preparation
Remove the meat from the lobster, cut into ½ inch pieces and place in a large mixing bowl. Add onion, tomatoes, celery, garlic, olive oil, basil, mint, lemon juice and toss. Season with salt and pepper and allow it to stand for 10 minutes. Put arugula, toss to coat, sprinkle with lemon zest and serve.

Steamed Lobsters with Seared Wild Mushrooms
Ingredients
  • Two 2-pound lobsters, halved lengthwise
  • 1½ tsp minced garlic
  • ¾ cup dry white wine
  • ¼ cup olive oil
  • Juice of ½ a lemon
  • 8 juniper berries, crushed
  • 1 tsp chopped thyme plus 5 thyme sprigs
  • Salt and freshly ground pepper
  • 2 bay leaves
  • 1 tbsp virgin olive oil
  • 1 pound assorted wild mushrooms, stems trimmed and thinly sliced
  • Large slices of sourdough bread, toasted
Preparation
Rub the cut sides of the lobster tails with the olive oil and garlic. Flavor the lobster with salt and pepper. In a large steamer, combine wine, lemon juice, juniper berries, bay leaves and thyme sprigs. Add 2 inches of water and lobsters to the steamer and cover tightly. Steam the lobsters over a high flame for about 8-10 minutes. In a large skillet, heat the remaining oil until shimmering and add mushrooms to it. Cook the mushrooms over a high flame for 8-10 minutes or until they turn brown. Put the garlic and chopped thyme and cook for 1 minute. Add the remaining white wine and cook until it evaporates. Flavor the mushrooms with salt and pepper. Serve the lobsters with mushrooms onto the sourdough toasts and enjoy.

Steamed Lobster Tips
  1. Substitute some of the water with beer for flavor.
  2. You can also add seaweed to the water.
  3. Try using sea salt instead of table salt for an authentic ocean taste.
  4. Keep a second pot of boiling water on the stove, so that you can refill the water when the lobsters are halfway through.
