Sponge cakes are very well-known for the soft, light and fluffy nature. These cakes are porous like sponge, and hence the name, sponge cakes. Basically, sponge cakes are made of eggs, flour and sugar, but, there are numerous versions that may require other ingredients too. In general, sponge cakes do not require shortening or butter as an ingredient. In some recipes, you may come across such requirements. Sponge cake texture is derived from the eggs, used in it. Preparing sponge cakes is not a messy task, but, knowing the right method can help you in making a perfect one.

Sponge Cake Recipe from Scratch

As mentioned above, there are numerous versions of sponge cakes. In order to prepare this basic recipe, you need 150 grams of plain flour, 225 grams of caster sugar, three large eggs, 75 ml warm water and one teaspoon baking powder. Preheat the oven to 375 °F. Now, separate the egg yolks and beat it with sugar for around two to three minutes. Make the mixture fluffy, by adding the warm water and beat it for another ten minutes. Keep it aside and sift the flour along with the baking powder for two to three times. The next step is to combine the mixture with the flour, which has to be added in batches. Now, whisk the egg whites, till firm peaks are formed. Gently fold in the egg whites to the flour mixture and pour it to a non stick baking pan. Bake it for around thirty minutes. You may also add one teaspoon of vanilla extract to enhance the flavor.

Lemon Sponge Cake Recipe

Ingredients
  • Plain flour or cake flour - 150 grams
  • Caster sugar - 200 grams
  • Medium-sized eggs - 3
  • Baking powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Lemon extract - ½ teaspoon
  • Milk (warm) - 6 tablespoons
  • Salt - ½ teaspoon
Procedure

Preheat the oven to 350° Fahrenheit. Start the process of cake making by sifting the flour with baking powder and salt. Keep the sifted flour aside. Take a bowl and beat the eggs, till it get fluffy. Add the sugar, lemon juice and lemon extract to this mixture and combine well. The next step is to add the sifted flour in batches and blend the mixture. Once the mixture gets blended well, add the warm milk gradually and mix them. Transfer the mixture to a non-greased cake tin. Bake it for around 45 to 50 minutes. Before removing the cake from the oven, make sure that it has turned golden brown and has also become firm. Keep the cake tin in an inverted position, till it gets cool. Remove the cake, once it becomes cool.
