The process of adding the bubbles and the fizz to the wine is something that happens in two stages. The first stage of fermentation follows the normal path and process of wine making, but then the wine is fermented a second time in order to add the bubbles. This second fermentation is carried out in the bottle itself, or in a specially designed tank for this purpose. The traditional method of creating sparkling wine is known as Methode Champenoise, and this is carried out in the bottle itself. When a special tank is used for second fermentation, the method is known as Charmat.
