The method of infusing this carbon dioxide inside the wine is something that can be achieved either by injecting the wine with carbon dioxide at some stage in the fermentation process, or by letting the carbon dioxide occur naturally during the fermentation. The traditional method of creating sparkling wine is known as Methode Champenoise, and this is carried out in the bottle itself. When a special tank is used for second fermentation, the method is known as Charmat.
