Spaghetti Squash Soup

Soup no. 1
Ingredients
- 1 Spaghetti Squash
- 4 tablespoons of olive oil
- 1 Garlic clove finely chopped
- ½ cup parsley
- 1 chopped onion
- 1 chopped tomato
- Chicken broth or stock
- Carrots and Spring onions
- Salt and pepper to taste
Cut the spaghetti squash in two pieces and clean it by removing all the seeds. Bake it in an oven at 350 degree for about an hour. In a stock pot, heat some olive oil, add the chopped garlic and onions, fry them till they turn golden brown. Now add the tomatoes and the other vegetables with parsley and fry it for sometime. Add the baked spaghetti squash and pour the chicken broth in the stock pot with the above ingredients. Heat the mixture on a low flame till the soup is of a thick consistency. Add salt and pepper to taste. If you like your soup a little spicy you can add red chilly flakes. Top the soup with some boiled noodles or toast pieces if you don't like it plain.

Ingredients
- 6 cups of chopped spaghetti squash
- 3 tablespoons of margarine or butter
- 1 chopped onion
- 1 sweet red pepper
- 5 cups of vegetable stock
- 2 teaspoons of nutmeg
- 1 pinch of ginger paste
- 1 pinch of cumin
- Salt and pepper
- 1 cup of water
Boil the vegetable stock for 5 minutes on medium flame, add the squash and cook it for another 10 minutes. In a separate sauce pan, add some margarine and fry the chopped onions and red pepper until they get soft and slightly brown. Meanwhile, keep stirring the stock. Prepare a squash puree and add it to the sauce pan. Add some water to the sauce pan mixture and then pour the stock into it. Stir the entire mixture for 5 minutes and add salt and pepper to taste. Your hot and mouth-watering spaghetti squash soup is ready in no time.

Ingredients
- 2 cups of low-sodium chicken broth
- 2 chopped carrots
- 2 cups of cooked spaghetti squash
- 3 scallions or spring onions
- ½ inch piece of ginger root, grated
- ¼ teaspoon allspice
- 1 pinch of nutmeg
- 2 tablespoons of roasted and chopped pecans
- 1 baked and chopped sweet potato
- Salt and pepper
Add some carrots in a sauce pan and leave it over a medium flame for about 5 minutes. Then add the spaghetti squash, scallions, sweet potato, cinnamon, ginger, nutmeg and allspice to the sauce pan and toss it for sometime. Add your chicken broth and simmer it for about 10 minutes on medium flame. Let the soup thicken, then puree the soup in a blender to make it smooth and without chunks. Pour the soup back to the sauce pan and bring it to a boil. Add some salt and pepper to taste. Garnish it with some fresh green chopped scallions and coriander. You can serve it hot with some pecans as well.

Ingredients
- 1/2 spaghetti squash baked in an oven
- Butter or olive oil
- 1 large chopped onion
- 4 minced garlic cloves
- 1 tablespoon of minced ginger
- 1 teaspoon of curry powder
- 6 cups of either vegetable or chicken stock
- Salt and ground pepper
Bake the spaghetti squash in a pre-heated oven for almost 40 minutes and scoop it out once it has cooled. In a sauce pan add some butter or olive oil on medium flame and add the onions. Cook the onions till they soften, then add the ginger, garlic, and curry powder. Stir it for about 2 minutes. Puree the squash in a blender and add it to the sauce pan along with the vegetable or chicken stock. Stir it continuously for sometime. Now season the soup with salt and ground pepper, serve it with some grated spaghetti squash.
