Shredded Chicken Sandwiches
Ingredients
  • ¼ cup snipped fresh basil
  • 1, 8 ounce can tomato sauce
  • ¼ cup honey
  • 2 medium onions, cut into ¼ inch thick slices
  • 1 tbsp olive oil
  • 1 cup chopped green or red sweet pepper
  • 2/3 cup cider vinegar or white wine
  • 1 tsp salt
  • 2, 12 inch loaves ciabatta bread, split and toasted
  • Pickle slices
  • 2 1¾ to 2 pound purchased roasted chickens
Process

If you haven't bought shredded chicken, first discard the skin of the chicken you have got and then pull the meat from the chicken. Shred the chicken using a fork, chop it if you wish. Heat olive oil in a 4 quart Dutch oven, over medium heat. Add sweet pepper and onion, cook for about 5 minutes, stirring frequently. Add in vinegar, cook for 1 minute and then add honey, tomato sauce, salt and basil. When the mixture starts boiling, add chicken and toss gently to coat, cook until heated thoroughly. Place the chicken mixture on the bottom of the bread loves and top them with slices of pickle. Cover the bread loaves with the remaining ones and cut into serving size portions. Shredded Chicken Salad
Ingredients
  • ½ cup green onions, slivered lengthwise
  • 1 clove garlic, minced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp sherry
  • ¼ cup chopped peanuts or slivered almonds
  • 4 cups rice sticks (after frying)
  • 1 tsp Hoisin sauce
  • 4 tsp sugar
  • 2 chicken breasts
  • 1 small head lettuce, shredded
  • ½ bunch cilantro
  • ¼ cup soy sauce
For Dressing
  • 1 tbsp sesame oil
  • 1 tbsp oil
  • ½ tsp coarse salt
  • ½ tsp salt
  • 2 tsp hot mustard
  • ½ tsp sugar
  • 2 tbsp red wine vinegar
  • 1 tsp Hoisin sauce
Process

For salad, preheat the oven to 350 degrees. Marinate chicken in soy sauce, sherry, minced garlic, sugar and Hoisin sauce. Bake this marinated chicken in the preheated oven for about 35 - 40 minutes. When the chicken slightly cools, shred it and set aside. Meanwhile, slice onions also, cut off the stems of parsley, cut lettuce and place all three in a bowl. Add chicken to this bowl, mix well and set aside. Now, fry the rice sticks and place them on paper towels to drain. Now mix all the ingredients of dressing together and pour over the chicken mixture. Toss well to coat. Add the rice sticks along with nuts and sesame seed, toss and serve immediately.

Crock Pot Recipe
Ingredients
  • 8 buns
  • 1 tbsp apple cider vinegar
  • 1½ cups ketchup
  • 3 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 4 large boneless skinless chicken breast
  • 1 tsp crushed red pepper flakes
  • ½ tsp garlic powder

This is one of the easiest BBQ shredded chicken recipe. However you need to have patience because firstly you have cook chicken breast in crock pot and cook for about 3 hours, at least, on high heat. When you are done with it, mix all the above ingredients in a large heatproof bowl, add the cooked chicken to it and heat it. When thoroughly heated, transfer the mixture to another bowl and let cool for about 5 - 7 minutes and then spread on the buns and serve.
