How to Make Sea Salt Ice Cream
You will simply have to follow the simple steps mentioned to make this delicious dessert. However, you will have to be careful while using sea salt. Depending on the sea salt you are using, you will have to adjust the recipe. The ice cream should not turn out to be too salty. It should be salty enough to boost the flavors of the ice cream. This recipe is a basic recipe, you can add flavors and colors of your choice to the recipe. You will require 1 teaspoon of flavoring. Since I am not too fond of colors, I avoid their usage as far as possible. Let's see what are the ingredients.
Ingredients
- Sugar 120 grams
- Egg Yolks 5
- Cream 220 ml
- Milk 220 ml
- Sea Salt 2 teaspoons
- In a mixing bowl, beat sugar and egg yolks together.
- Continue to beat them, until the mixture thickens and lightens in color.
- While you are beating sugar and egg yolks, bring milk to a low simmer.
- Gradually add milk to the egg and sugar mixture in a slow stream.
- Pour the mixture back into the pan and place the pan over low heat.
- Stir the mixture continuously until the custard starts to thicken slightly and just coats the back of a spoon.
- However, ensure that you do not over heat the mixture, as if the temperature of the mixture goes above 72 - 73 degrees Centigrade, it will turn into scrambled eggs.
- Remove the mixture from the heat and allow it to cool for some time.
- Then stir in salt into the mixture.
- While the milk mixture is cooling, whip the cream until it doubles in volume, so that you have soft peaks.
- Gently fold in the custard.
- Freeze the ice cream in the freezer, stirring it every few hours.
