Chicken Salad Sandwiches with Smoked Almonds
Ingredients:
  • Fresh brown or multi-grain bread, 6 slices
  • Cooked chicken, shredded, 1 cup
  • Minced green onion, 2 tbsp
  • Minced fresh tarragon or basil leaves, ¼ tsp
  • Mayonnaise, 2 tbsp
  • Finely chopped smoked almonds, ¼ cup
  • Clean lettuce leaves, 6
  • Freshly ground pepper and salt, to taste
In a large bowl, mix together chicken, green onion, chopped herbs, ½ cup of mayonnaise, smoked almonds, salt and pepper. Place a lettuce leaf on three slices of brown bread, spread the mix evenly on them, top again with lettuce and bread slice. Cut diagonally, and wrap in foil. Open when ready to serve.

French Stuffed Sandwich
Ingredients:
  • Large round loaf French bread, 1
  • Large ripe tomatoes, sliced, 3
  • Thinly sliced salami, 3 ounces
  • Sliced thin turkey breast, ½ lb
  • Fresh mozzarella cheese slices, ¼ lb
  • Purple onion, thinly sliced, 1
  • Sliced ripe black olives, 1, 2½ ounce can
  • Marinated artichoke hearts, liquid reserved, 1, 6½ ounce jar
  • Mayonnaise, ½ cup
Cut loaf of bread in half, horizontally and make a hollow by scraping it out. The loaf should look like a empty shell. In small bowl, stir artichoke liquid with mayonnaise, and spread onto bread shell's insides. Start by layering the ingredients as per your choice, the layers should be the same from both sides. Once the layer has been mounded till top, wrap entire loaf tightly with plastic wrap and refrigerate for minimum two to three hours before slicing the loaf to serve.

Baked Turkey Sandwiches
Ingredients:
  • Raw turkey, 25 lbs
  • Fine dry breadcrumbs, 3 1/8 lbs
  • Fresh chopped onions, 3 lbs
  • Sliced tomatoes, 2 lbs
  • Green peppers thinly sliced, 2lbs
  • Mozzarella cheese, 3 lbs
  • Chopped fresh parsley, 3½ oz
  • Worcestershire sauce, 8½ oz
  • Garlic powder, 1¼ oz
  • White pepper, ½ oz
  • Dry mustard, ¾ oz
  • Salt, 1¼ oz
  • Sandwich buns, sliced, 9 lbs
Mix turkey, crumbs, onions, parsley, salt, garlic powder, pepper, Worcestershire sauce and mustard thoroughly. Shape into patties 1/2-inch thick, weighing 5 ounces and place it on baking sheets. Bake at 325 F, until done. Place a slice of mozzarella cheese on top of each patty and melt in oven. Place the turkey patties in the sandwich bun slit, garnish with slice of green pepper and tomato, and serve.

Ham and Beef Sandwiches
Ingredients:
  • Thinly sliced roast beef, 1 lbs
  • Thinly sliced fully cooked ham, 1 pound
  • Dill pickle slices, 12
  • Sliced green onions, ¾ cup
  • Worcestershire sauce, 1 tbsp
  • Shredded cheddar cheese
  • Softened cream cheese, 8 oz
  • Mayonnaise, ¼ cup
  • Unsliced Italian bread, 2 loaves of one pound each
Cut the bread in half, lengthwise, scrape crumbs to create a hollow out of the top and bottom of the loaves. In a large bowl, mix cheddar and soft cream cheese, onions, mayonnaise and Worcestershire sauce, and spread it evenly over cut sides of bread. Then layer it with slices of ham and roast beef, top it with pickles and gently press halves together. Wrap in a plastic wrap and refrigerate for at least two hours before serving.
