A power house of omega 3 fatty acids, salmon should be regularly incorporated in the diet. Salmon is quite a favored fish among many individuals. One can get them fresh or frozen round the year. If you are the type who does not like to cook the whole fish, try using fillets. They are easy to cook and very easily available; fresh and frozen. While buying fillets make sure you buy firm fleshed fish.
Salmon Herb Fillet
Ingredients:
- Medium-sized salmon fillets, 2
- Double cream, ½ cup
- Crushed black peppercorn, 1 tbsp
- Crushed white peppercorn, ½ tbsp
- Dijon mustard, 1 tsp
- Butter, 1 tbsp
- White wine, 2 tbsp
- Chopped chives, 3 tbsp
- Salt, to taste
In a small bowl, mix both; black and white peppercorn together. Drizzle Dijon mustard over salmon fillets and coat it from all sides. Now sprinkle crushed peppercorn into the cut sides of the salmon. Mask the fillets completely with it. Season with salt and set aside. In a heavy fry pan, heat butter and fry fillet on medium flame until both sides are browned. Turn the heat onto full and pour in white wine over fillets. Once the wine completely evaporates, pour the cream. Scraping all sides around the fillets on full heat, bring the sauce to a boil, until it thickens. Add more seasoning if needed. Reduce heat and simmer for a couple of minutes. Serve fillet hot with chives garnish and some hot rice.
Baked Salmon Fillet
Ingredients:
- Salmon fillets, 1 pound
- Whisky, 1 tbsp
- Mayonnaise, 5 tbsp
- Chopped dill, 1 tbsp
- Salt and pepper, to taste
- Lemon juice, 2 tbsp
- Melted butter, 1 tbsp
For each fillet, have a separate foil packet. Brush butter on the foil, place fillet on it. Brush butter once again, coating both sides. Dab lemon juice over the fillet, sprinkle some whiskey and season with salt and pepper. Bring the folds of the foil together, to make a packet. Bake salmon in a preheated oven at 300 degrees F for 10-15 minutes. Meanwhile, whisk dill, mayonnaise, leftover lemon juice and salt and pepper. Serve fillets hot with the dill-mayonnaise sauce poured over it.
Grilled Salmon Fillet
Ingredients:
- Salmon fillets, ½ pound
- Parmesan cheese, 2 tsp
- Lime juice, 1 tbsp
- Wine vinegar, 1 tbsp
- Grated lemon rind, 1 tsp
- Crushed dried herb, 1 tsp
- Soy sauce, 1 tsp
- Garlic powder, ½ tsp
- Salt and pepper, to taste
In a bowl combine together, lemon juice, wine vinegar, lemon rind, dried herb, garlic powder and soy sauce. Place fillet on a foil and pour over fish. Sprinkle Parmesan cheese atop and season. Place a pan on a grill and place fish fillet on it. Cover grill and cook for 20 minutes. The grilled cooked fish should flak easily with a fork.
Grilled Salmon Sandwich
Ingredients:
- Salmon boneless fillet, 4 four ounces
- Fresh herbs, 2 tsp
- White pepper, ¼ tsp
- Olive oil, 2 tbsp
- Fresh lemon juice, 2 tbsp
- Cooking oil, 1 tbsp
- Salt, to taste
- Sandwich bread, 4 slices
Prepare marinade using oil, lemon juice, herbs, salt and white pepper. Place fillet in a dish, making sure they don't overlap each other. Marinade fillet, cover and refrigerate for half an hour. Cook fish either on a fry pan or on a grill until cooked. Place fillet between sandwich bread slices and serve.
