Till date, I haven't met anyone who does not like rum cake. Christmas without rum cake is like... let's say Sherlock Holmes without Watson! To bite into the soft delicious cake every Christmas, is what I look forward to each year. They melt in your mouth like butter and the smell takes you away in a different land where the only thing you can see around you are rum cakes, rum cakes and more rum cakes (oh God! My mouth's started watering already). Children love the cake that their mom makes. If you, unfortunately, do not know how to make a rum cake, no worries. Here is a rum cake recipe from scratch, which you can try out at home and make this Christmas even more special for your children.

Jamaican Rum Cake

There are several types of cakes which you can try out at home; Italian rum cake, Banana rum cake and the list goes on. But first, you need to know how to make a simple rum cake, before you try your hand at these cakes. Wondering how to do that? Well, here is a simple recipe which will teach you the basics. Once the cake proves to be a huge hit amongst your friends and families, then move on to the next step and surprise your family.

Ingredients
  • Jamaican Rum, 2 cups
  • Butter, 6 tablespoons
  • White Sugar, 2 cups
  • Water, 1/2 cup
  • Vegetable Oil, 1 cup
  • Instant Vanilla Pudding Mix, 2 packets
  • Eggs, 8
  • Chopped Pecans, 1 cup
  • Yellow Cake Mix, 2 packets
  • Milk, 1 cup
  • Salt, as per taste
  • Vessels to Make the Cake
  • Preheated Oven (325 degrees F)
Method
  1. It's not a tough job, preparing a simple rum cake. First just take a bowl and put in the cake mix, the vanilla, and mix them together well.
  2. Next, in this mixture, add the eggs, water, milk, salt and rum. Start mixing this till you have a smooth paste. Make sure that there are no lumps in the batter. I am sure you would not like it when you bite into the cake and realize that some parts of it are still raw even after baking it well.
  3. Now, using the butter and grease the baking pan well so that the cake does not get stuck to it when being baked. Spread out the pecans on this pan and then pour the batter, evenly, over the pecans.
  4. Put this dish in the preheated oven and bake it for at least an hour or until the cake is baked properly.
  5. In the meantime, you have to make the glaze for this cake and this is not much of a trouble.
  6. In a small pan, you have to first melt the butter and mix it with water and sugar and then boil the entire thing for at least 5 to 6 minutes.
  7. Do not forget to stir the mixture while it is boiling.
  8. Now keep this mixture aside and add the rum and then stir it again, well.
  9. Take out the cake now if it's done and then add the glaze over it. Let the first coat soak in before you add the next coat.
Spiced Rum Cake

Ingredients
  • Milk, 2 cups
  • Cooking Oil, 1/6 cup
  • Sour Cream, 1/2 cup
  • Rum, 1/2 cup
  • Pumpkin Pie Spice, 2 teaspoons
  • Spice Cake Mix (2 layer size), 2 packets
  • Eggs, 8
  • Rum Glaze (I am sure you know how to make it now)
  • Preheated Oven (350 degrees F)
  • Vessels to make the cake
Method
  1. In a large bowl, you have to first mix the milk, the cake mix, the oil and all the other ingredients and make a batter.
  2. Grease the baking dish, and then pour in this batter in this dish and bake it in the oven for at least 30 to 40 minutes or till the cake is done.
  3. After cooling the cake, put the rum glaze on it and your cake is ready.
If you want to know the banana rum cake, then you just have to follow the same procedure as the Jamaican rum cake. The only ingredient that you have to add is the smashed banana (2 cups).
