Take a big bowl to beat the egg in. Then add milk, molasses, cooked brown rice, and cinnamon in. Keep mixing the ingredients for about 2 to 3 minutes and then add the blueberries. Mix one more time and add this mixture inside the pan. Place the pan inside the oven for 20 minutes. Once the top part begins to turn golden brown, remove the pan from the oven, and leave it in one side to cool. You can either serve the pudding hot or cold.

- 4 cups 2% milk
- 3 tablespoons Splenda
- 1 teaspoon light butter
- 1 teaspoon vanilla extract

First we preheat the oven to 275º F. In a bowl mix rice, milk, and Splenda together. Transfer this mixture inside a baking dish and place in the oven to cook for about 3 hours. In between, stir the pudding so that the rice doesn't stick in the bottom. If the pudding is drying out, you can add more milk to maintain consistency. After the pudding is cooked, remove the dish from the oven and add butter, vanilla extract, and cinnamon. Mix properly and serve either hot or cold.
