Gluten is the protein present in food grains like rye, oats, barley and wheat. Although proteins are necessary in one's diet, there are people who are allergic to gluten. This is called celiac disease and is caused when the gluten effects the interior of the small intestine, thus restricting it from absorbing nutrients from food. The symptoms of celiac disease are abdominal cramps, diarrhea, bloating, weight loss and gas. It is important for a person diagnosed with celiac to follow a strict diet, which is free from gluten, and most probably has to be followed for the rest of his life. Hence, every meal has to be consumed with extra care, including desserts. People with a sweet tooth may have a hard time as desserts like cakes, pastries and bread pudding have gluten in them. However nowadays, there are many gluten free products available in the market to make mouth watering gluten-free deserts.

Banana Cake Recipe

Ingredients
  • 4 ounce mashed banana (made of 1 banana)
  • 2-3 egg whites
  • ½ teaspoon baking powder
  • 4 ounce raisins
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ¼ cup margarine or butter
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 teaspoons powdered sugar
  • 3 tablespoon fat-free yogurt, soy yogurt or low-fat buttermilk
  • ¼ tsp guar gum
  • 8 ounce all-purpose gluten-free flour mix
  • 3½ teaspoon apple juice or dark rum
Preparation

Take flour in a large bowl and mix it with salt, baking soda, guar gum and baking powder. Whisk till all these ingredients blend well, and keep it aside. Melt the margarine or butter in another bowl and add it to the brown sugar and mix well. In the same bowl, put in yogurt or buttermilk, egg whites, mashed banana, and vanilla extract. Blend well and add to the flour mixture and whisk till all the ingredients get mixed. Take a small bowl, add raisins and apple juice or rum and keep it in the microwave for 1 minute. Pour this into the flour-banana mixture. Take a baking pan, grease it and pour the mixture into it. Keep the pan in a preheated oven and bake for half-an-hour at a temperature of 350º F. Top it with powdered sugar and serve.

Easy Creamy Blueberry Cheese Dish

Ingredients
  • 2½ cup blueberry pie filling
  • 3 ounce raspberry or grape flavored gelatin mix
  • 1 cup cream cheese
  • 8 ounce sour cream
  • 20 ounce crushed pineapple or pear, drained
  • 1 teaspoon vanilla extract
  • 4 ounce white sugar
  • ½ cup chopped nuts
Preparation

In a bowl, take water and stir in the gelatin slowly. Remember that gelatin should dissolve completely, and finding undissolved gelatin in the dish is a sign of bad culinary skills. When you think this is done, add the blueberry pie and the crushed pineapple or pear. Blend all the ingredients well, then take a tray of 9 x 13 inches in size and pour the mixture into it. Place it in the refrigerator, to chill. While the crust for the dish is being made, take another bowl and whip sugar and cream cheese well. Then, add vanilla and sour cream and mix well. If the gelatin-blueberry mixture has become firm, take it out of the refrigerator and pour the prepared mixture into it. Again keep it for cooling and garnish it with chopped nuts while serving.

Glutton-free chocolate cake

Ingredients
  • 1 cup unsweetened chocolate
  • ½ cup water
  • 8 ounce margarine
  • 5 large eggs
  • 1-1/3 cup sugar
  • ½ cup semisweet chocolate
Preparation

In a cooking vessel, take water, margarine, 1 cup sugar and chocolate and cook on medium heat. Stir till the chocolate melts fully and keep aside for cooling. In a metal bowl, break the eggs and keep it over the stove to make it warm. Remember that you do not have to cook them and so avoid keeping in direct heat. In a mixing bowl, transfer the egg and beat adding the remaining cup of sugar till the batter becomes fluffy. Pour the chocolate mixture into it and spread into a baking oven. Bake it in a preheated oven (350 degrees) for 30-35 minutes. Garnish it with raspberries and whipped cream and serve warm.

These recipes for gluten free desserts are easy to make and at the same time safe for the person suffering from celiac disease. Now, even if you are diagnosed with this disease, you do not need to compromise on your favorite lip smacking desserts.
