  • 2 (9 oz) packages fresh cheese ravioli
  • 2 tbsp grated Parmesan cheese
  • 1 pound roma tomatoes (peeled, seeded and chopped)
  • 1 (6.5 oz) jar marinated artichoke hearts
  • ½ cup chopped green onions
  • 3 cloves crushed garlic
  • ½ tsp salt
  • 1 ½ tbsp olive oil
  • ¼ tsp freshly ground black pepper

Cook ravioli as per the package directions and meanwhile to prepare the sauce heat 1 tbsp of olive oil in a non stick skillet over medium high flame. Ingredients
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups sliced mushroom
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup all-purpose flour
  • 1 cup evaporated 2% milk
  • 1 can tomatoes
  • 1 lb frozen cheese ravioli or tortellini
  • 1 cup grated Asiago or Parmesan
  • ¾ cup chopped fresh basil
  • 2 tbsp chopped fresh parsley

Take a sauce pan and heat oil over medium high flame. Add onion, garlic, mushrooms, salt and pepper and cook for about 6 - 8 minutes or until no liquid remains; stir occasionally. Now sprinkle flour and cook for a minute or so. Stir in milk and tomatoes and mash the tomatoes with the back of the spoon. Bring it to a boil, reduce the heat and let is simmer for about 10 - 12 minutes or until it thickens. Cook ravioli by boiling it in a large pot of boiling salted water for about 10 - 12 minutes or until it turns tender but firm. Drain and return to the pot. Add sauce, cheese, basil and parsley to the ravioli and stir well until the cheese melts. Transfer the ravioli sauce to a serving platter and serve hot.

Ravioli with Butter and Parmesan Sauce

Ingredients
  • 2 packages (11 oz) fresh wild mushroom ravioli
  • 1 cup unsalted butter
  • ½ cup fresh basil leaves
  • 6 tbsp toasted pine nuts
  • 1 whole nutmeg or ½ tsp grated nutmeg
  • ⅔ cup grated Parmesan cheese

Cook the ravioli in a large pot of boiling salted water for approximately 5 - 6 minutes. Drain well and transfer it to a platter. Take a medium-sized fry pan, heat butter at medium high flame and add basil leaves. Cook until lightly fried, for 2 - 3 minutes.
