Quick and Easy Supper Ideas

Chicken and Potato Salad

Ingredients

750g potatoes
1 tbsp fresh lemon juice
6 tbsp extra-virgin olive oil
2 tbsp chopped fresh mint
2 red chillies, de-seeded and finely chopped
Bunch of spring onions, chopped
1 tsp Spanish smoked paprika
2 x 238g packs mini chicken breast fillets

How to Make

Cook the potatoes in boiling salted water for 15 minutes, until just tender. Once it is cooked, drain well and quarter each potato and put them in a large bowl. Alternatively, you can cook your chicken recipe under a grill by putting the chicken on a foil-lined tray and cooking for 8-10 minutes, turning once, until tender. Now, whisk together the lemon juice, 4 tablespoons oil, the mint, chillies and seasoning and pour over the potatoes and then cool. Finally, add the onions and mix the remaining oil with the paprika and toss.

Rice and Chicken Morsel

Ingredients

1 pound boneless chicken breast, cut into thin strips
1 teaspoon paprika
1½ cups long grain white rice
2 cups chicken broth
1 small onion, coarsely chopped
3 cloves garlic, minced
½ cup coarsely chopped green bell pepper
½ teaspoon salt
½ teaspoon freshly ground black pepper

How to Make

Place the chicken strips in a bowl, and sprinkle with the paprika, salt, and black pepper while stirring the ingredients to coat the chicken. Place the broth in a pot, and bring to a boil over high heat, after which add in the chicken, onion, garlic and the rice. Stir the ingredients and reduce the heat to low. Cover and let it simmer for 15 minutes.

Steamed Fish Dish

Ingredients

Fish
Chopped up broccoli
Chopped up green beans or asparagus

How to Make

Place fish in a steamer over a pot of boiling water and add the chopped broccoli, green beans and asparagus. Now cover and cook for 5 minutes, until fish flakes easily with a fork. You can serve this quick fix fish dish with brown rice.

Presto Pasta

Ingredients

Pasta
2 chopped onions
3 cloves garlic, minced
Tomato-based pasta sauce - canned or bottled
Canned drained lentils or clams

How to Make

Brown the onions and garlic in a skillet and add canned or bottled tomato-based pasta sauce along with some canned drained lentils or clams. Serve this over your Italian pasta or couscous along with a tossed green salad to complete the meal.

Chicken Wraps

Ingredients

A deli-roasted chicken
Honey mustard
Slices of tomato
Onion
Shredded cheese
Bacon

How to Make

Pull the meat off a deli-roasted chicken and spread honey mustard or ranch dressing across the wrap. Then add a layer of slices of tomato, onion, chicken, shredded cheese and bacon (if desired). Now roll and serve with a side of tossed salad.
