Quick Microwave Pavalova
For when you need a dessert recipe in a hurry. A great stand by recipe when unexpected guests arrive.
For those who follow my cooking adventures, you know how I love to cook. And usually I am inventing a new Crock Pot Recipe or showing you how to decorate a cupcake.
But today it is something different. Today I am in a hurry, not that that is unusual.
And I need a quick and simple dessert recipe, right now.
I am sure you have days like that too.
I need something to cook right now.
For times like these, I have recently found a fantastic recipe, thanks to a great friend of mine. She recently shared it with me and I just felt I should share it with you.
This dessert recipe is fast; it takes only a couple of minutes to prepare and about three minutes in the microwave. And it is sweet, delicious and served with cream and fruit.
This fast and easy dessert recipe is based on a Pavalova which is an Australian and New Zealand dessert. That has a shell of meringue and a soft marshmallow center. The secret to a traditional Pavalova is a slow and long cooking time.
But this recipe ignores tradition and turns the recipe into a speedy rendition by taking only 3 minutes to cook. This results in the loss of the crisp outer shell but you retain the delicious, gooey marshmallow.
Try it. You’ll be glad you did.
Quick Pavalova Roll
¼ cup hazelnut meal or cinnamon sugar or crushed nuts
4 egg whites
¾ cup of castor (superfine) sugar
1 teaspoon white vinegar
1 teaspoon vanilla
Take the glass tray from your microwave. Cut a piece of non-stick baking paper to the size of your microwave turntable. Put the baking paper on the turntable. Sprinkle with the nuts to create an even coverage – this is to stop the pav from sticking when it’s cooked.
Using an electric beater whip the egg whites till fluffy. Add the vinegar and vanilla. Then the sugar. On a high speed, whip the eggs till very firm peaks form.
Drop spoonfuls of the egg mixture onto the baking paper in blobs. Smooth out the blobs to form a roughly smooth shape. Be careful not to disturb the nuts too much.
Place it in the microwave and cook on high for three minutes. Open the microwave door to avoid condensation and allow to cool. When the pav is cool to the touch, cover with a thick layer of whipped cream and fruit (try kiwi fruit or mixed berries or maybe strawberries and passionfruit).
Roll up into a firm roll. Show your masterpiece off at the table and serve everyone a slice. Serve with extra fruit and cream.
