Pumpkin Oatmeal Cookie Recipes

Since the time cookies were being made, people are coming up with a variety of cookies by adding different ingredients. One such variety is the pumpkin oatmeal cookies. Nutty Pumpkin Oatmeal Cookies
Ingredients
- 8 ounces pumpkin
- 8 ounces oats
- 1 cup softened butter
- 1-2 medium sized eggs
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
- ¾ sugar, granulated
- 1 teaspoon baking powder
- ½ teaspoon ground allspice
- 1½ teaspoons ground cinnamon
- 16 ounces all purpose flour
- 8 ounces light brown sugar
- 1 cup cranberries or raisins
- ½ teaspoon salt
- 1 cup nuts- can include hazelnuts, pecans or walnuts
- Take the flour in a large mixing bowl and add oats, salt, cinnamon, baking powder, salt, all spice, baking soda. Mix till it is combined well and keep it aside.
- In another bowl, break the eggs and blend it with pumpkin and vanilla. In a small pan, mix butter with the sugars and pour into the egg mixture.
- Add the flour and oats mixture into it and stir till the batter becomes fluffy.
- Cut the nuts and put in the batter with raisins or cranberries and mix well. Preheat the oven at 350°C. Take a baking sheet and grease it slightly.
- Place the batter in the baking sheet with small teaspoons. To ensure that it does not spread, keep a gap of 1 inch between every cookie.
- It will take approximately 15 minutes for the cookies to become firm and brown. Allow it to cool and serve in room temperature.

- 1 cup cooked pumpkin puree
- 1 ⅓ cup rolled oats
- ½ teaspoon nutmeg
- 1 teaspoon vanilla
- 2/3 cup canola oil or apple sauce
- 1 2/3 cup sugar
- 1 teaspoon baking soda
- 3 teaspoon ground flax seeds
- 1 teaspoon ground ginger
- 16 ounces flour
- 1tsp cinnamon
- ½ cup raisins
- ¾ teaspoon salt
- 2 tablespoons molasses
- ½ cup chocolate chips
- 8 ounces walnuts
- In a big bowl, take oil or apple sauce, vanilla, pumpkin, flax seeds, molasses and sugar and mix well. Put it aside.
- Mix together oats, flour, cinnamon, ginger, baking soda, nutmeg and salt in another bowl. Add the above mixture while stirring continuously.
- When you think all ingredients have blended thoroughly, add the chopped walnuts, raisins and chocolate chips and mix again.
- Grease a baking sheet and pour the cookie batter into it. Bake the cookies in a preheated oven at 350°C. It takes 16 minutes for the cookies to set completely.
- After it cools, take out and cut it with a cookie cutter. Store it in air tight containers and enjoy to your heart's content.
