  • ½ teaspoon dried thyme
  • 1 (3 pound) sirloin tip roast
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1¼ tablespoons paprika
  • ½ teaspoon ground cayenne pepper
  • 1 tablespoon kosher salt
  • ½ teaspoon dried oregano

Method of Preparation

Preheat oven to 350º F (175º C). Mix the paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano and thyme in a small bowl and stir in the olive oil.   • 5-6 lb bone-in pork loin roast
  • 6 garlic cloves

Method of Preparation

Use a mortar and pestle to mash the garlic along with salt into a paste. To this paste, add the herbs, pepper and olive oil. Keep mashing the herbs together until well combined. Use the mashed herbs to rub on the roast all over. Place the roast in the fridge to marinade for about 24 hours until ready to roast.

After 24 hours, remove from the refrigerator and allow it to come to room temperature. This is a very important step, as we want the pork sirloin to be warm all over before cooking it well. Now, preheat the oven to 475° F.

Place the fat side up of the roast in a shallow roasting pan on the cake rack. Put the pan in the center of the oven and cook for 35 minutes. In this time, the internal temperature of the roast will rise up by 30° F. Place the roast back into the oven to finish cooking it. Cook for another one hour and fifteen minutes, or until the internal temperature of the roast comes to about 145° F.
