Poppy Seed Chicken Salad

Surprising as it may sound, salads can be a very filling meal by themselves. Especially, when you add to it the goodness of chicken, vegetable, fruits and dried fruits, tossed with a tasty poppy seed salad dressing. If you find it too boring to just eat it as a salad, make a sandwich out it! Well then go ahead and add some really yummy poppy seeds and chicken salad recipes to your menu.

Poppy Seed and Toasted Almond Chicken Salad

Ingredients
  • Cooked chicken breast, cubed, ½ cup
  • Pasta, 2/3 cup
  • Toasted, silvered almonds, ¼ cup
  • Chopped onion, 2 tbsp
  • Chopped celery, 1½ tbsp
  • Poppy seed salad dressing, ¼ cup
  • Any dried berry, 2 tbsp
Cook pasta in boiling water with a little salt, until just tender. Drain, rinse with cold water, drain again and set aside. In a salad bowl, toss chicken, almonds, onion, cranberries and celery along with pasta, and drizzle with poppy seed salad dressing. Coat well and serve chill.

Herb Roasted Poppy Seed Salad

Ingredients
  • Chopped herb roasted chicken breast, 1 cup
  • Poppy seed salad dressing, ½ cup
  • Frisée head, 1
  • Endive, 1 head
  • Crumbled cheddar cheese, 1 cup
Cut off the frisée and endive's bottoms, separate their leaves and toss them together in a bowl. Drizzle salad dressing and toss to coat well. Spoon in the crumbles, cheese and herb roasted chicken pieces. Toss once again to combine all ingredients. Serve with some more poppy seed salad dressing.

Crunchy Poppy Seeds in Chicken Salad

Ingredients
  • Cooked chicken breast, shredded, 4 ounce
  • Broccoli coleslaw, 2 cups
  • Thinly sliced red pepper, 1
  • Thinly sliced yellow pepper, 1
  • Shredded carrots, 1
  • Dried cranberry, 4 ounce
  • Poppy seed creamy salad dressing, ¼ cup
  • Broken walnut and cashew kernels, ¼ cup
In a large salad bowl, combine all the ingredients except the salad dressing and broken dried fruits. Drizzle salad dressing over the ingredients in the salad bowl and toss to coat well. Sprinkle with walnuts and cashews just before serving.

Poppy Seed and Chicken Sandwiches

Ingredients
  • Cooked and shredded chicken breast, 2 cups
  • Poppy seed dressing, ½ cup
  • Chopped celery, ½ cup
  • Shredded lettuce leaves, ¼ cup
  • Lightly roasted and broken in half cashews, ¼ cup
  • Sliced red and green grapes, ½ cup
  • Croissants, halved, 3
  • Thinly sliced tomato, 6-7
  • Salt and pepper, to taste
In a large bowl, mix all ingredients except lettuce and tomato slices, and refrigerate it for at least six hours. Spread it evenly on each halved croissants, and top it with the lettuce leaves and thin tomato slices.

Poppy Seed Honey Chicken Salad

Ingredients
  • Cooked and chopped chicken breast, 2 cups
  • Poppy seed dressing, ¾ cup
  • Diced celery, 1
  • Chopped pecans, ½ cup
  • Honey, 1/3
  • Sweetened dried cranberries, ½ cup
  • Salt and pepper, to taste
In a large salad bowl, mix all ingredients except honey, salad dressing and chopped pecans. In another smaller bowl, stir to combine honey and poppy seed salad dressing, and drizzle over the salad. Before serving, top it with a sprinkle of chopped pecans.

Chicken and Poppy Seed Salad

Ingredients
  • Chicken breast, 2-3
  • Olive oil, 1 tbsp
  • Poppy seeds, 1 tsp
  • Salad vinegar, ¼ cup
  • Chopped cucumber, ½
  • Toasted and chopped walnuts and almonds, ½ cup
  • Thinly sliced red onion, ¼
  • Salt and pepper, to taste
In a large sauce pan add olive oil and some salt and pepper, bring it to a boil, add chicken and simmer, until tender. Drain, cool and shred. Combine all ingredients in a bowl, including the chicken and toss it with poppy seeds and salad vinegar.
