Pina Colada Recipe

The classic pina colada recipe comprises rum, coconut cream, and pineapple. Here are some versions, as well as a pina colada cake recipe!

Say the word, pina colada, and apart from the beach, this song pops into my head, for Garth Brooks aptly describes the magic powers of a pina colada. A sip of this cocktail can instantaneously transport you to a beach in the Bahamas, where you lie in a hammock with a wide brimmed straw hat. This official beverage of Puerto Rico, is a confluence of rum, coconut cream, and pineapple juice. Pina coladas are among the most popular cocktails the world over, and while the ingredients for pina colada stay the same, the quantities are tweaked to suit different palates.

Tropical Recipe
Ingredients
  • Ice cubes
  • ¼ cup pineapple chunks
  • ½ cup light rum
  • ¼ cup coconut milk
  • ½ cup coconut cream
  • Maraschino cherry, for garnish
  • Sliced pineapple, for garnish
Directions
Throw a handful of ice cubes into the blender. Pour in the rum, coconut cream, coconut milk and toss in the pineapple chunks. Blend briefly at high speed. Strain into glass, garnish with slice of pineapple and maraschino cherry, and serve. Cheers!

Non Alcoholic Pina Colada
Ingredients
  • 2 tbsp granulated sugar
  • 1 cup ice
  • ½ cup whipped cream
  • 1 ¼ cups pineapple juice
  • ½ cup coconut milk
Directions
Pour the sugar, whipped cream, pineapple juice and coconut milk to the blender, and then add the ice. If possible, frost the rim of the glasses with sugar. Blend until smooth, pour into chilled glasses and serve.

Frozen Pina Colada Recipe
Ingredients
  • 2 cups ice
  • Pineapple slices
  • ½ cup diced pineapple, frozen
  • 1 ounce dark rum
  • 2 ounces pineapple juice
  • 1 ½ ounces white rum
  • 2 ounces Coco Lopez coconut cream
Directions
Add the ice, juice, frozen pineapple, coconut cream, and both the rums into the blender. Spin until smooth, and then pour into 2 glasses. Garnish the rim with pineapple slices as desired.

Pina Colada Cake
Ingredients
  • 1 package (18 ¼ ounces) white cake mix, plus ingredients to prepare mix
  • 1 fresh pineapple, peeled, cut in half lengthwise and cored
  • 2 ½ cup cold whipping cream
  • 2 ¾ teaspoons vanilla
  • ¼ cup dark rum
  • 1 cup powdered sugar
  • 2 cups sweetened shredded coconut, toasted
Directions
If you like pina coladas, you'll love this cake. Preheat the oven to 350°F. Spread the grated coconut on a cookie sheet, and bake for 5 to 7 minutes, till it turns light golden brown. Follow the instructions on the box and prepare cake mix. Bake it for the recommended amount of time in 2 (9 inch) round cake pans, but keep checking to see if it's done. Once the cakes are cooked, take them out of the pans. Place the pineapple down, and chop it into very thin slices. Use paper towels to dry the slices.

To prepare the rum filling, mix together ½ cup cold whipping cream, ¼ cup dark rum, 2 tablespoons powdered sugar and ¾ teaspoon vanilla in a small bowl. Stir lightly until well blended, cover the bowl with plastic wrap and refrigerate. To prepare the topping in a large bowl, whisk 2 cups whipping cream for a minute and half or until you get soft peaks. Add ¾ cup powdered sugar and 2 teaspoons vanilla. Whisk for another 30 seconds or so, until it takes on a more stiff consistency. Seal the bowl with plastic film and refrigerate.

Place one of the cakes on serving plate. Use half the rum filling, and spread it evenly over the cake. Over it goes 1 cup of the whipped topping, and then a cup of the shredded coconut. Place the other cake over it, and follow the same layering with the toppings, but this time cover the sides too. Stick the pineapple slices around side of cake. Serve immediately or refrigerate.

Using above recipes, you can have this creamy drink ready in a matter of minutes, but for those to whom lethargy is an art, there are ready pina colada mixes available. However, the secret of those truly fantastic tropical pina coladas is fresh ingredients. For further variety, you can try making pina colada drink with coconut rum.
