Oven Roasted Red Potatoes

Oven Roasted Baby Red Potatoes

Ingredients
  • Basil - 1 tablespoon
  • Olive oil - ½ cup
  • Parmesan cheese (grated) - 1 cup
  • Seasoned salt - 2 teaspoons
  • Thyme - 1 tablespoon
  • Baby red potatoes - 2 lbs
  • Pepper to taste
Procedure

First preheat the oven to 425 degree Fahrenheit. Wash and cut the red potatoes into small cubes of 1 inch each. Then, place the potato cubes in the baking pan and sprinkle the olive oil to coat the red potato cubes. Add basil, red pepper, salt and thyme and toss the potatoes properly. Add half of the grated Parmesan cheese on the potatoes and place the mixture in the preheated oven for 30 minutes. Then take out the baking pan, check whether the potatoes are dry. If yes, add some more olive oil. Then add the remaining grated Parmesan cheese and place the baking pan again into the oven for 30 more minutes. Let the mixture cool for sometime before serving.

Oven Roasted Red Potatoes with Garlic

Ingredients
  • Garlic (dried, minced) - 2 teaspoons
  • Red potatoes - 8 to 10 medium
  • Olive oil - 3 tablespoons
  • Dried parsley - 2 teaspoons
  • Salt and pepper to taste
Procedure

Wash and cut the red potatoes into small cubes or quarters. Preheat the oven to 350 degree Fahrenheit. Take a 9 by 13 inches baking pan and put the red potato cubes in it. Drizzle the olive oil over the red potato cubes and toss the cubes with the help of a spoon. Toss until the cubes are coated properly with the olive oil. Then sprinkle all the spices and again toss the cubes. Place the baking pan in the preheated oven for an hour. Stir the potatoes in between after every 15 minutes. After an hour, remove the baking pan from the oven and serve the tasty roasted potatoes.

Oven Roasted Red Potatoes and Carrots

Ingredients
  • Carrots - 6 large ones
  • Red potatoes - 6 small ones
  • Pepper - ¼ teaspoon
  • Chili powder - ¼ teaspoon
  • Rosemary - ½ tablespoons
  • Salt - 1 tablespoon
  • Olive oil - ⅓ cup
  • Garlic powder - ½ teaspoon
Procedure

Wash, peel and cut the carrots and potatoes into small pieces. See that the carrot pieces are thin and do not exceed ¼ inch thickness. Cut the potatoes to small 1 inch cubes. Thick carrot slices will give too hard carrot cubes and soft potato cubes in the end. Now, put these cubes in a baking pan, preferably 9 by 13 inches size. Take a medium-sized bowl and combine olive oil and spices to it. Drizzle this mixture over the cubes and toss them properly. Place the baking pan in the preheated oven at 450 degree Fahrenheit for 30 minutes. After 30 minutes, use a fork and check whether the cubes are cooked. Then let the mixture cool for 5 minutes before serving.
