Chicken Drumsticks
Ingredients
- 24 skinless chicken drumsticks
- 3 eggs
- 2 cups cornflake crumbs
- ½ cup Parmesan, grated
- Salt and cayenne pepper, for taste
Before we start the recipe, set the oven temperature at 350ºF. Take 2 roasting pans and line them with aluminum foil and coat with vegetable oil. In a bowl, combine cornflake crumbs, salt, cayenne pepper, and Parmesan together. Beat the eggs in another bowl. Now dip chicken drumsticks in egg first and then roll in the cornflake crumbs mix. Directly place the drumsticks in the pans and coat them individually with vegetable oil. Place the pans in the oven and let the chicken cook for about 1 hour, without turning them. Then, lower the temperature to 180ºF for 10 minutes. Remove the pans and serve the chicken warm.
Chicken Wings and Thighs
Ingredients
- 4 boned chicken wings and thighs, rinsed
- 4 lemon wedges
- 4 tablespoons olive oil
- ½ cup breadcrumbs, seasoned
- ½ lemon zest
- 2 garlic clove
- 2 cup parsley leaves
- Salt and black pepper, for taste
Before we start the recipe, set the oven temperature for chicken at 400ºF. Chop the garlic and parsley in a bowl and add breadcrumbs, lemon zest, salt, and pepper in it. Add 2 tablespoons oil to the mixture and combine properly. Place the chicken in a baking pan and coat it with this mixture. Drizzle the rest of the olive oil and place in the oven to bake for about 25-30 minutes. Once the chicken is cooked, serve with lemon wedges.
Chicken Breasts
Ingredients
- 4 chicken breast halves, skinless, boneless
- 2 cups frozen green peas, steamed
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon mustard powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ⅔ cup instant oats
- ½ teaspoon dried thyme
- Salt and black pepper, for taste
Set the oven temperature for chicken at 400ºF. Use vegetable oil to coat a baking dish. In a plastic bag, mix in garlic powder, onion powder, mustard powder, paprika, oats, oregano, thyme, salt, and pepper. Use the Dijon mustard to brush the chicken breast and then coat with the dry mixture. With the tongs, take the coated chicken breasts and place on the baking dish. Keep the dish in the oven and bake for about half an hour. Once the chicken turns brown, serve with hot green peas.
